I'll do rice later so it will still be safe to eat.. I am still slightly wary of rice after I made me incredibly ill!
How did rice make you ill??
I thought it was OK to cook rice in advance - cold rice for salads and such.

Yay,,, my food science skills are coming in,..

Rice has a spore forming bacteria called Bacillus cereus on its outer surface. As it is spore forming it is able to survive hot and cold temperatures.
However, do not panic... If rice is cooled correctly to less than 4 celcius once cooked it is safe to store. It is not safe if you cook it, pop it in a bowl or some such and then leave out in a warm kitchen until it is eaten later.
I work in the food industry and whenever we process rice, which we do a lot. Once cooked we plunge into into cool water.. about 20C and then chill in ice cold water. If this is done quickly and then the rice is well rinsed and drained it should not affect the texture.

Storing the rice when cooked below 4C prevents the spores of Bacillus cerues from forming the bacteria. Therefore.. no poorlies!

    Hope this helps

    Many thanks Sarah.
I am away tomorrow with an early start.
I need to take lunch with me and was thinking that rice with some tuna would be nicer (and healthier) than a sarnie, but wanted to prepare it today.

see - a flylady for every occasion...

thanks Shysarah...I did know it wasn't safe to store cooked rice - now I know exactly why - or, at least, WHO to ask next time I forget!

    Hello All,

Slow start here this morning. Woke up to find my postman on the door step.. made him laugh with my just got out of bed/stick fingers in a light socket styleeee hair. My hair is quite long and thick so I have to tie it up at night or I cannot get a brush through it.

Well, I have got my GodD's MP3 player in the post today, she wanted one like mine and as she is only 9 and I am not as well off as I was I managed to find her one just the same but refurbished so a lot cheaper. Its really good just charging it up and need to load it with music before her birthday next weekend.

Today I am going to my Cousins to have a little Halloween party. I have splashed out on a witches hat and some sticky skull sweet things so should be fun.

Have to go round to the pet shop as last time I went they charged me wrong so I have to go sort that out. Also got some Christmas bits to buy and my cousin and I are pooling an order to save on postage. When I get back I must also sort out my deliveries and my eBay bits as they end tomorrow.

Have a good day all and remember its the weekend so take some time out for yourselves

    Love, Hugs and Spoons

Ohh.. no probs about the food science thing. I work (when I am well) in the technical side of the food industry so I need to know about all this sort of thing.

Crafty it should be fine as long as you chill it, keep it chilled over night and pop it in a fridge at work.. there is no need to be mega worried.

Lovely day here so I've been to town on my bike.
