    Can anybody help with a kick !!!!!! recipe for beef stew and dumplings ?

    Stewing steak cut into cubes and tossed in flour, chopped up onion, sliced carrots and any other veg you want to throw in. Stock cube, mixed herbs, tomato puree and garlic puree. ground pepper & water.

    Fry the onion in a little oil, when they have softened toss in the floured beef and brown, add a dessertspoon of mixed herbs, tomato puree and a good squirt of garlic, season, crumble over the stock cube and add the water, slowly........so the flour thickens the liquor........add the veg, put in a slow cooker and cook for about 6 hours, or prepare the whole thing in a pressure cooker and cook on 15lba pressure for 20 minutes.

    Dumplings

    4 ozs SR flour, 2 ozs suet, I use veg suet.
    2 tablespoons of sage and onion stuffing.

    Mix everything together in a bowl, then add some water and leave to stand.....the mixture should be slack but not sloppy. Leave to stand for about half an hour and then see if they need a little more water, the stuffing has breadcrumbs in and it ill swell the mixture.

    If you are using a slow cooker put spoonfuls of the dumpling mix on the top of the stew about 3/4 of an hour before you want to eat, to check if the dumplings are cooked slide a knife into the dumpling, if it comes out clean the dumpling is done.

    If the stew is cooked in the pressure cooker, cook the stew for 20 minutes at pressure, reduce the pressure, take the lid off and put the lumps of dumpling into the cooker and put the lid back on without the pressure weight and cook for about 20 minutes, try with a knife as before......

    If I have any red wine I put that in the gravy as well........ you may want to thicken the gravy a little more, I use slaked cornflour.

    I cook my stew the day before I am going to use it, put it in the fridge to allow the flavours to develop, then put in a casserole dish in the oven for about an hour, after 30 minutes in the oven put the dumpling mix on, spoon gravy over the top and cook for about another half hour, you can also do it in a pan on top of the stoven once the stew starts to bubble turn the heat down low add the dumpling and cook for anout half an hour as before.

  • Great recipe, but can I recommend you use SHIN beef, not just ordinary stewing steak, or even braising steak. Shin comes in round slices (about 3" diameter) which are very easy to cut up into cubes. There is hardly any fat on it, and turns into a really tender morsel.

    By the way, whatever meat you buy, don't let the shop cut it up into cubes for you (chicken, pork, beef, whatever). That's how they get rid of all the rubbishy bits and pieces they've cut off the better joints. And if the meat is a bit fatty it's really difficult to cut the bits of fat off each little cube of meat - it's much easier to cut the fat off a larger. whole piece.

    I also put pearl barley and lentils in my stew, loads of goodness and makes it more filling. I often use the left over meat from my Sunday roast (tomorrow we are having lamb stew, as we had roast lamb) and i always try and make extra gravy so i dont have to make more, if i dont have enough left over, i often put a tin of heinz oxtail soup in, does the job in double quick time and always tastes great!!!!

    I marinade my beef in beer in the fridge overnight, and then cook it in the beer the next day. Otherwise I do everything pretty much as written by tootles.

    It works for me. Guinness for first choice, any good bitter for second.

    I use beer or lagar to make a really tasty Beef Stew, all the other ingredients depend on what I have to hand.

    I've even used frozen vegetables and it still works fine.

    When you make it make it more liquid than you need to then you can freeze the excess liquid and have it as soup another day.

    I add chilli flakes and sprinkle of paprika or ceyenne pepper to my dumpling mix - makes a nice change.
