Hi All
I want to make dumplings tonight - now my dumplings are not BAD but i cant say theyre FAB either
theyre always a bit too dense and heavy for my liking if im going to be fussy
so do any of you have any tips?
i will be doing them on the hob in a gravy0 -
Cold hands and don't over knead, 2 cups sr flour, 1 cup of suet. It doesn't matter if you use a teacup or mug, depending on how many you want. Ratio is 2:1 flour/suet.0

I just combine with a fork until all the flour is mixed in0

Some time ago a lady posted a recipe for making them with just egg and flour (low fat) they were gorgeous -hang on & I'll look out the instructions - which I have put 'somewhere'....0

Found it!! It comes from a lady called Bambywamby and it works!! I made 1/2 quantity and they come out huge....
Makes 4 large dumplings
2 cups (mug size) of SELF RAISING flour
2 eggs
salt & pepper
Herbs (optional) I like sage in them
and 2 tablespoons of water.
Put your flour in a bowl. Add dry ingredients. Add eggs and mixed well.
You may already have a dough type consistency and not need to add the water (this depends on the size of your eggs.)
If you still have flour at the bottom of the bowl that hasn't mixed in, add one tablespoon of water at a time until you get a nice, doughy consistency.
If you add a touch too much liquid, add a little flour to get the balance back.
Split the mixture into 4 then roll into balls and pop them ontop of your stew.
They take 30 mins to cook in the oven or ontop of the hob. (remember to put a lid on them when on the hob to ensure the top gets cooked too.)0 -

Baking powder in that recipe would help, something similar to this is what I would use if not doing a suet dumpling
