What would you do with Beef Brisket in a slow cooker?

OH came back from Tesco's with a joint of rolled brisket - and I have no idea what to do with it
I do have a slow cooker and wondered if anyone had any tasty recipes they could recommend please
I chop up celery, onion, carrots, swede, shake of mixed herbs and bay leaf, chopped potatoes and put in bottom of SC with brisket on top and add stock up to two thirds of height of brisket and leave on all day on low. By the evening you have a lovely brisket joint and can either serve the veg with the beef or chop up some of the brisket and add to the stew for another day (can be frozen) and serve the beef with mashed potato and cabbage.Thanks to MSE, I am mortgage free!

Brisket Recipe
I just cooked brisket yesterday!
I found a recipe on the net that was absolutely delicious.
Slice up an onion, and toss it into the slowcooker.
Rub some crushed garlic over the meat.
Mix 2 tablespoons of ketchup,
2 tablespoons red wine vinegar (I used Balsamic)
1 tablespoon brown sugar
Salt and pepper.
Put brisket into the slowcooker, and spoon the mix over it.
Then about half a cup of water with a stock cube to cover the bottom of the pot.
Mine was on for about 11 hours on low, and tasted incredible.
This was posted by Lil2001 on the thread Pinkwing has linked you too but its on page 5 so you may miss it. I really cannot say how yummy this is. I have cooked it and done it as a roast dinner. Or on boxing day we have family round and I cooked it off and shredded it with gravy poured over and served it in rolls with mini roasties. Tasted fab, minimum effort and everyone loved it.0 -

I do mine exactly the same, except i bung the brisket in a hot frying pan with a spot of oil first and brown it all over, then pop it on top of the veg in the SC! its lovely!0 -
Am really annoyed now as I have planned all my menus for the month and due to various outside committments (want it to be a day when all 5 of us are eating at home) and shopping bought so far cannot fit this in for a couple of weeks! Can I really wait that long when I am droolong at the thought of it whilst typing0

Our 750g piece of brisket was defrosted and I chopped onions, swede and carrots and put in the bottom of my slow cooker. I added the brisket, black peppercorns, bay leaf pint of beef stock and a quarter bottle of red wine and cooked for 8 hours on low.
When cooked I sliced the meat, took out the veg and poured the juice into a saucepan and added bisto to thicken. Served with roast potatoes and cabbage it was absolutely delicious, easy to cook and cheap0 -

Not that you can't but I wouldn't.
Slow cooking is about getting tender meat from the cheap cuts but topside isn't a cheap cut, it will be tender anyway just from going in the oven.0
