I most certainly have!
It's fantastic. Really light and moist and sticky and... :
I took a slice to work today. Didn't see much of it though, as I got mugged by my colleagues, who were well impressed. :cool:If you lend someone a tenner and never see them again, it was probably worth it.0 -
Mr Bad Example, may I say your cake looks so lovely I am spending my 100th post on you to tell you that. :-)
I really want some ginger cake now, I might have to make some, thank you OP for the recipe :-)Comping, freebieing and trying to pay the mortgage off early!0 -

I made some more of this at the weekend. As I now have two loaf tins, I made two, so that I wasn't just using my oven for one thing. I've just tested one, and it seems a bit undercooked in the middle.
The two of them had 1¼ hours at 150°C, and the original recipe says 1 hour. It was shrinking away from the tin a little, and it did spring back when pressed with me finger (although, now I think about it, perhaps not as much as my last one).
Basically, what I'm asking is, if I cook two do they need longer?
I can't see why they should. The oven is at the same temperature, so they should cook at the same speed. I realise that I'm putting twice as much in for it to heat up before it regains the correct temperature, but surely it doesn't make that much difference?
Finally, can I improve them by putting them back in the oven now? They're not too bad, to be honest, just a bit "doughy" in the middle. Now I look at my previous picture, above, I'm reminded of how it should look, as that one was perfect. Should I try to cook them a bit more or put up and shut up?
I made one for some mates, and I couldn't possibly hand it over unless it's perfect. I'll have to eat them both and I'm getting much too lardy. If you lend someone a tenner and never see them again, it was probably worth it.0 -

Hi freya,
There's an earlier thread with some Parkin recipes that should help so I've added your thread to it to keep the replies together.
