    Have you tried it MrB?

    I most certainly have! :D

It's fantastic. Really light and moist and sticky and... :

I took a slice to work today. Didn't see much of it though, as I got mugged by my colleagues, who were well impressed. trink04.gif
If you lend someone a tenner and never see them again, it was probably worth it.

I made some more of this at the weekend. As I now have two loaf tins, I made two, so that I wasn't just using my oven for one thing. I've just tested one, and it seems a bit undercooked in the middle. :( The two of them had 1¼ hours at 150°C, and the original recipe says 1 hour. It was shrinking away from the tin a little, and it did spring back when pressed with me finger (although, now I think about it, perhaps not as much as my last one).

Basically, what I'm asking is, if I cook two do they need longer?

I can't see why they should. The oven is at the same temperature, so they should cook at the same speed. I realise that I'm putting twice as much in for it to heat up before it regains the correct temperature, but surely it doesn't make that much difference?

Finally, can I improve them by putting them back in the oven now? They're not too bad, to be honest, just a bit "doughy" in the middle. Now I look at my previous picture, above, I'm reminded of how it should look, as that one was perfect. Should I try to cook them a bit more or put up and shut up?

I made one for some mates, and I couldn't possibly hand it over unless it's perfect. I'll have to eat them both and I'm getting much too lardy. :(

Thanks Rikki, I was looking for some inspiration as to what to bake tonight. :D
There's already some fruitcake loaves on order and Miss Twit wants some little buns for school.

    Hi freya,

There's an earlier thread with some Parkin recipes that should help so I've added your thread to it to keep the replies together.
