The discussion about this idea so far has assumed that you are trying to sell these kits to adults to make into toys for kids for Christmas. I think you should give some more thought to your target market - adults would probably buy the kits as Xmas pressies for their kids, so that they can knit their own soft toysOf course, I'm not sure whether I'm right about this, but it's another avenue which is worth a try! (If you do try to market them towards kids, make sure they are very attractively packaged, with a brightly coloured piccy of what they are aiming to make included in the packaging. You could do this on your computer, couldn't you?)
