    We would never even dream of getting anything other than proper free-range eggs, either from our friends, who have chickens, or from an approved farm. So I canot see anything wrong with a vegetarian eating veggie scotch eggs, after all eggs are not baby chickens until they've been fertilised.

    We do this with chunky cut mushrooms, onions etc instead of/as well as sausages. Very tasty.

    You can't actually buy vegetarian Scotch eggs (to the best of my knowledge), so if you wanted to use my suggestion, you would have to make them yourself, in which case you can choose any type of egg you want.

    If they are arriving late then I'd check if they will have had dinner first before serving up a huge spread. But for a snack how about Tortilla's which are lovely either hot or cold

    Or you could do pizza or pitta breads toasted & crudites with dips.

    As for other meals there are loads of lovely veggie pasta dishes or you could do a veggie risotto (BBC good food has loads of ideas).

    They are available, just not everywhere, mostly larger supermarkets.

  • Coming from a veggie myself whose mother-in-law cooks very traditionally, I wouldn't recommend being too obsessive about this and buying quorn/linda mcartney substitutes. If you don't usually cook with quorn, don't worry about it now.

    DO think simple! :)

    Light lunch/ snack:
    -Jacket potatoes, beans, cheese, coleslaw
    -Go mad with dips! carrot, cucumber and celery sticks, with crisps or nuts
    -Don't forget salads (you can make these fancy with things like olives and shop dressing)

    Main cooked meals:
    -Vegetable lasagne (basic veg instead of meat i.e. carrot, aubergine)
    -Quiche (Such useful dish! mushroom, tomato, cheese+ onion. Serve with new potatoes/ oven chips/ boiled veg)
    -Pasta (sauces: cheese+mushroom, tomato+basil with salads)
    -Risotto
    -Noodles+stir fry veg with nuts
