puff pastry wheels.
roll out sheet of puff pastry - cover with thin layer of pesto and parmesan (veggie versions, of course) or tomato puree and basil leaves - roll into a sausage shape from one end to the other and cut into half a centimetre pieces.
Place on a greased over tray (leaving sufficient space between each one as they will puff), brush the tops with milk and bake on a medium oven for 15 to 20 mins or until golden brown.
Nice little snacks - i alwsys add parma ham for non-veggie versions.S.A.D and proud

Do check what sort of things your friend will eat - I know some 'vegetarians' who will eat fish -so are technically pescatarians - and others who simply don't like meat but will eat meat derived gelatine quite happily - because it doesn't look or taste like meat! On the other end of the scale are strict vegans who won't eat anything which is derived from an animal so you need to be really careful about reading labels etc.Trust me - I'm NOT a doctor!0

Be careful with red wines, some are not veggie friendly.
I'm trying to think what my veggie friends like,

or rabbit in the hole, just like toad in the hole but I fry up some sous mix to replace the meat sauages (they taste so much nicer than quorn sausages I find).
Or pizza, beans on toast, jacket potato with a veggie filling, omellette/quiche (assuming veggie not vegan). Or spagetti boulanesse (just replace the mince with chopped mushroom is even more yummy) I use a friends reciepe with carrots, onion, celery, pepper, tin of plum tomatoes, brown sugar and a veggie stock cube (it would also make a great jacket pot filling). Or how about a homemade pumpkin pie (considering the date), they are sweet and yummy great with some cream.
It's a question of what they like and how much effort you want to go to.0 -

Wow thanks for all the replies! I have definitely taken on board loads of ideas.
I know it would have been easier to ask, but as she knows I work lonng hours, I know she will say "don't go to any trouble", so I just wanted to surprise her!
