Bulk buying bread flour?

    There's a good book on Amazon called something like 'fresh bread in the morning from your bread machine' it's about £4 and has some very good recipes in, measured! I tend to use this book now rather than the book that came with my bread machine as it uses better ingredients.

    I like the Doves Farm yeast packet, in the orange packet for about 99p from Waitrose or Tesco. I use approx 1 tsp per loaf usually.

    As for bread flour, it varies a lot, I prefer organic and tend to stick to Waitrose organic. Some flours do not produce good results so find one you like and is consistent.

    It is a lot cheaper depending on flour than buying bread but I also add malt extract, seeds and organic oil so it can be cheaper.

    I prefer to just use the breadmaker to make the dough now and I use 500g of flour and then split the dough into 2 x 1lb loaf tins and stick one in the freezer for mid week.

    I bought a Panasonic d255 second hand for£35, it came with no measuring spoons, I have been very pleased with the results so far, I looked at Allisons easy bake yeast but could not find a fast or quick on the packaging and every recipe suggests using fast or quick yeast. The book sounds a good idea, I will take a look. Thanks for posting your recipe, when you see 1 tea or tablespoon, is it a heaped one or a level 1?

    The Doves Farm orange packet yeast is a 'quick' yeast, it works out very economical - not sure about Allinsons as the yellow tin isn't quick yeast and the packets are I believe but work out more expensive.

    You could get a set of measuring spoons from any cook shop etc, they are quite cheap and well worth it. Use level measures :)

    It's best to buy a set of measuring spoons and use these, as cutlery type spoons vary. They're cheap to buy. Measuring spoons are always used level.

    ETA: Just looked in the cupboard and I seem to be using the Doves Farm Quick Yeast too atm, the one in the orange pack that states it's for bread machines.

    In my panny i usually make 70% wholemeal/30% white. I'll get Asda own flour or Lidl and always got good results, but a few weeks ago i stocked up from Tesco when they had 3for2 offer on. I've noticed the bread is fine for taste but it doesn't seem to be raising as much, Anyone else noticed a difference with Tesco flour.

    Is doves farm yeast available from supermarkets, never seen it that's all, whats sort of extras do you put in? I know seeds are good, what else?

    Yes, Tesco or Waitrose for 99p.
    I use malt extract instead of sugar.
    and pumpkin/sunflower/flax seeds.

    I have also noticed that when using Tesco flour my bread does not
    rise so much. I do prefer Asdas.

    I use this & keep it in the freezer. Just take it out to throw into the BM pan then straight back into the freezer. I think the pack probably lasts about 6-8 months & never goes off in the freezer.

    I also use a mix of 1/3 "posh" flour, 1/3 strong bread flour & 1/3 plain flour. I haven't noticed a huge difference in my bread even though I've used lots of different flours in the past. If I can remember I chuck in a dollop of poppy seeds :rotfl: or a shake of a seed mix. Luckily my BM seems quite forgiving on quantities, but some are really fussy.
    And I find that looking back at you gives a better view, a better view...

    I opened a new pack of Sainsbury's flour the the weekend before last, both batches of dough I've made with it haven't risen as much as usual. I've used it before no probs, this seems to be a dodgy batch. Perhaps it came from the same mill as the Tesco flour.
