  • My mum does this recipe where you chop a butternut squash into chunks, mix it with garlic and olive oil, roast it till it it soft and just starting to go browned, then sprinke over the top a handful of sultanas previously soaked in orange juice, a pack of crumbled feta cheese and some pine nuts.
    It is delicious!

    I have a chunk of feta cheese lurking in my fridge and I'm not too sure what to do with it. I've already done the obvious and put it in a greek salad and cubed into pasta and pesto but are there any other quick and easy things to do with it?

    Could you make those little Greek pastry things with Feta and Spinach in, they're lovely! I don't know the receip but I'll have a look online and see what i can find!

  • I make pizza with halved cherry tomatoes, fresh basil (or pesto) and feta.

    I'll add this to the existing feta thread so that you can browse other ideas ;)
