  • Whistler-Alison do you have a name for the feta ? They sound lovely and they look like good candidates for experimentation - I'm thinking feta-sundried tomato-olive (like Sarahsaver's stuffed chicken ).

    Tescos veggie section does feta & spinach puff pastry crowns which we have as a lazy dinner now and then, you could make your own version of those, serve with jacket and salad. Lovely & creamy :D YUM

    Had this in Crete this summer - delish. This is my version

    Baked Feta

    Place feta in oven proof dish
    liberal splash of Olive Oil
    Chuck on thinly sliced red pepper, tomato
    Season as you like (pepper, herbs)
    shove in medium oven for 20 minutes
    :dance:There's a real buzz about the neighbourhood :dance:
  • Does anyone freeze their feta cheese, please? I have half a block left from yesterday and although I'm drooling at the thought of snarfing it down in one go, my sensible head is telling me that I've already had my quota for the week (WW diet, sigh) and I need to conserve the rest for another day.

    Can't find any mention of freezing it anywhere, so has anyone else tried this?

  • Easy salad - beetroot and feta. Scatter them both over some leaves, add some tomatoes and green beans if you have some - cheap too.

    Sounds very similar to Delia's Feta, Spinach & Pine Nuts Galette

    I can highly recommend the galettes - they're also delicious cold. If you can resist the temptation :j

    Very lazy salad

    Cubes of feta, watermelon and nuts - either hazelnuts or shelled pistachios (sp?)

    Make a dressing of olive oil and lemon juice, mix it all together and serve asap.

    Lovely and fresh.

    I think they advise against it mainly because of the water content rather than hygene/health issues. I have never done it myself but if you were to pull a bit out for crumbling in cooking it might be o.k
