    place in an ovenproof dish, place on top very thin slices of tomato and/or red peppers. Add herbs of choice if desired. Drizzle with olive oil and bake in a moderate oven for 20 minutes or so

    You can use it in the same way as more or less any other cheese really, quiches, omelettes, whatever. I like it in sandwiches or rolls with tomatoes and basil leaves, or olives too, though it is quite crumbly. It is nice with spinach as well. You can make a pie with filo pastry. It is called spanokopitta (I bet I have spelled that wrong!) or something like that. Try typing 'feta cheese and spinach' into the recipe search thing on Sainsburys website. I find them quite useful sometimes when you are not quite sure what to cook with what you have.

    Have a taste of it and then look in the fridge to see what you have that you think would be nice with it. It is crumbly and salty. I make up a tortilla wrap with crumbled feta, crispy bacon, chicken and avocado with a dressing made from yoghurt mixed with spring onion and cucumber (is that tzatziki?).

  • Take a pizza base, and top it with halved cherry tomatoes, olives, chopped pepper and sliced onions. Add some seasoning and herbs, then top with crumbled feta. Cook as usual.

    How about Greek cheese pies?

    Crumble it into a dish with chopped spinach - season to taste.

    Lay out a couple of filo pastry layers, brushing melted butter between layers to stick together. Cut into 3 inch squares. Put a teaspoon of feta/spinach mix onto one side and brush around the edge of the feta mix with melted butter and fold over other side of square to form a triangle shaped pasty.

    Repeat until all are made and place on greased baking sheet. Brush tops with butter and bake for 15-20 minutes until golden brown.

    These are really more-ish. You can freeze them after cooking (reheat for 10 minutes in hot oven). They are ideal to serve with drinks at a party or for snacks.

  • Lebanese Cheese Pie

    4 discs of pita/lebanese bread
    1 cup of milk
    250g (9oz) feta cheese
    250g (9oz) cottage cheese
    1 carton sour cream
    4 eggs
    salt & pepper to taste
    3 tablespoons melted butter or margarine

    Split each piece of bread down the middle, to create to 2 thin slices of bread. Pour the milk into a shallow bowl and dip the bread into the milk to soften it. Grease a round ovenproof dish and place 1 slice of bread in the base, then 4 or 5 more rounds, overlapping in the middle. Allow the bread to flop well over the sides of the dish.
    Beat together the feta cheese and cottage cheese, add the sour cream, eggs, salt and pepper and beat well. Pour into the dish.

    Fold the sides of bread back over the top. Put 2 more slices of bread on the top. Melt the butter and pour on top of the pie. Place in a moderate oven and bake for 30-35 minutes or until puffed and the filling is set.

    I do stuffed mushrooms with it. Get 2 large mushrooms chop the stalks(I also use a few normal mushrooms chop finely and cook in a little olive oil or butter. Add 3 small spring onions(or a red onion) again chopped finely.When softened add feta cheese(cubed) it will go creamy and gooey. Place in mushrooms and bake for 18 mins in a moderate oven. This also works as a pasta sauce. I made it on sunday adding a little milk and some parsley as money is a bit tight at the moment. It was delicious.
