Feta cheese

What can I do with 2 blocks of feta cheese, other than loads of salad, I can't think of anything!

  • I mix it with cous cous. I guess this is a bit salady, I put srping onions, peppers in the couscous (as well as some olive oil,& lemon juice)

    I also like it in pitta bread with either hommous or tzatski.

    I bet there will be others along woth far better ideas.

    Oh oh oh! I roasted some veggies & had them hot & sprinkled some feta on top! That was nice!

    If you make a standard tomato sauce (onions, tin of tomatoes, herbs etc.), place the feta in an oven proof dish put the tomato sauce on top and top with some more cheese (parmesan is good) and then put in the oven for 25 minutes, it goes all soft and is really nice as a starter with crusty bread.

    Thanks for starting this thread Lillydrip I just found some feta lurking in the back of the fridge and wondered what to do with it!

    There is a great recipies somewhere on this forum (sorry can't remember where or who posted it) for prawns in tomato sauce with feta cheese crumbled in, and popped in the oven until the cheese melts. It is fabulous - once I discovered it, I've been making it regularly ever since, so thanks to whoever posted it
  • I crumble it into lamb mince with mint, onion, garlic etc and make Greek lamb burgers

    slit chicken breasts,stuff with feta,place in an oven dish,pour over passata ( or chopped toms)
    cook til bubbling and chicken cooked through

    caramelised red onion and feta quiche / pastries
    spinach and feta pizza
    feta and sundried tomato cous cous / pasta
    feta and pesto pasta with pine nuts
    sliced chicken breast,roasted med veg and feta melted in,in ciabatta or rolled up in a flour tortilla

  • Wish I'd picked up a slab this morning at Tesco now :) It lasts for ages unopened doesn't it?
  • mexican ring.

    1/2 red onion
    1/2 red pepper
    block feta grated
    4 mushrooms
    2 tbs chilli sauce
    juice lime
    1/2 a block of puff pastry

    Chop up all the veggies fine and mix into all the ingredients.

    roll out the pastry into a long rectangle

    place the feta mixture in the middle of the pastry and roll like a swiss roll.

    Place in a 200oc oven for 30 mins.

    I serve with new pots and salad.
