    In the monthly grocery challenge thread, the first few posts have links to recipes - I've tried the Indian style mince with potatoes and peas and it was lovely.

    How about cannelloni? Just make a bolognese, fill cannelloni tubes (pack costs about 65p) layer in a shallow dish then top with white cheese sauce and cheese. It's yummy!

    Home made burgers can be a lot healthier and tastier than bought. If you have too many cook them anyway, they can be taken into work for lunch and microwaved before putting in a bun.

    How about a Mince and Potato Pie, I make it from a book called Mince :D

    I'm not sure about printing out a whole receipe but if you can cook the above meals then you will get the idea if I give a few pointer.

    I make this on a 7" wide foil pie dish using 250g of mince.

    8oz of flour to 4oz of fat makes enough pasty according to my notes. :T

    Ingredients:-

    Onion
    Carrot
    ketchup
    Lea & Perrins
    Marmite
    (we have L&P and Marmite in anyway so nothing extra to buy) I used Purree instead of ketchup last time as we don't buy ketchup.
    Plain flour
    Potato
    salt and pepper

    Fry onions mince and carrot, add ketchup, L&P, marm, flour, S&P

    add diced potato, 150ml of water bring to boil and simmer for 15 minutes, allow to cool.

    make pastry and fill with filling

    Cook for 30 mins gas mark 6 200c/180 fan.

    It freezes and re-heats very nicely.

    Lasagne - can be served with salad, chips or with just veggies.

    I like plain old mince and tatties, with chopped up onion and tin of sweetcorn bunged in.

    Mind you currently have chilli made out of the last batch.

    Another one, Cheat's Chicken curry

    500g minced chicken or turkey
    2 onions
    2tbsp curry paste
    400g chopped toms
    100g red lentils - I leave this out


    Fry onions and mince
    add curry paste
    canned toms
    Plus a can full of water, it says boiling water, don't do this - its very hot, ask me how I know this :D

    Bring to the boil and boil for 10 mins - that probably due to the lentils.
    Simmer for 20 mins

    Again this freezes perfectly. I seem to remember it being abit thick though, so maybe have some stock on hand.

    I've never mastered a proper curry but this seems to work for me.
  • I love meatloaf as a mince recipe (sorry if it's already been mentioned, I didn't read all 11 pages!)

    2lb / 1kg mince - you can use all beef mince or a mix of beef and pork.
    Small, finely diced or minced onion, crushed garlic
    3 slices of bread, whizzed to breadcrumbs
    1 egg, beaten
    seasoning and herbs as you like
    400g tomato sauce, or barbeque sauce (or mix tomato ketchup, brown sauce, soy sauce and honey and paprika to make a tasty sauce).

    Mix the ingredients (use HALF the tomato sauce), shape into a meatlaf shape and place on double thickness of foil, and place on wire rack or baking tray (bear in mind fat will run out so make sure drips will be caught), spread with the rest of the tomato sauce, and bake for about 40 mins @ 200 degrees C or until cooked.

    You could sprinkle grated cheese on top halfway through. I don't see why you couldn't also use cooked rice or lentils in the mix to make it go further. This makes a large meatloaf and you could halve the ingredients, but leftovers are delicious in sandwiches or various other meals.

    What else to do with mince.....

    other than lasagne, bolognase, chilli, meatballs, cottage/shepherds pie, burgers what can I make with mince please?
