I was right with you until you said you cut the sugar down, don't want one anymore! :p

If you cut the sugar, by say 10%, it means you can legitimately eat twice as many.

It's about quality of life - what makes you happier, lovely scrummy cakes or sticking to the rules every day
    I know what I choose - cake.

I love home baked stuff. My Bero book is my bible :D

I made myself a chocolate birthday cake and my husband also bought me a chocolate birthday cake. Mine was much nicer, but don't tell him I said that :o

Everybody loves lemon drizzle cake don't they? I often make them and here's my recipe ......

6 oz butter or soft margarine
    6 oz flour
    6 oz caster sugar
    3 eggs
    zest of one lemon

Cream butter and sugar together, mix in the eggs, flour and lemon zest (plus a splash of milk if necessary)

Bake in an 8" round tin at gas 4 for 30-40 minutes or so. Make sure you've lined the tin with greaseproof (I use one of those ready made cake tin liners)

While the cake is cooking in the oven mix another 4 oz sugar with the juice of one lemon to make a syrup. When the cake is ready make lots of holes in it (I use an ordinary table knife to get biggish holes) - then drizzle the lemon syrup over the hot cake while it's still in the cake tin. Leave to cool and then take out of the tin. Enjoy

Oh and about that baking, the current healthy eating advice is the 80:20 rule and I'm all for it. It says that if 80% of the time you eat healthily then 20% of the time you don't have to. Your mother in law is therefore the out of touch one, not you.

Yes but the "current healthy eating advice" will change next week, and
again the week after. I don't think the "experts" really know what they're talking about.
