Hi all! This is my first post so here goes! I was given a book as a present called, I think, "Red Velvet, Chocolate Heartache" which you may be interested in. Its lots of cake/muffin recipes which use vegetables for their natural sugars, cutting out fats and cutting down on sugar. I was a little sceptical but my Mum tried the chocolate cake one (I think made with butternut squash) and I can personally vouch for its yumminess! I haven't tried the others but if you're wanting to be a bit healthier it may be a route to try!
Though I would caution that if you do make some, let people eat them and decided if they like them before you tell them! My little cousins admitted to loving the cake until they were told it had vegetables in and then refused to eat another bite!0
