Pancake toppings / fillings

With Shrove Tuesday coming up, I'm organising a pancake-fest for some friends and need some ideas for fillings and toppings that I can make (preferably in advance!) - both savoury and sweet.

Any ideas? Also, do I need to make different pancake batter for sweet / savoury pancakes?

    Not sure about the batter, but I imagine you use the same one.

    SWEET:

    american pancakes with maple syrup - let me know if you want the pancake recipe

    lemon / curd

    sugar

    ice cream

    fruit salad

    ricotta cheese

    SAVORY:

    use the pancakes as crepes (with cheese sauce etc) or

    put a small bit of cheese sauce inside, fry some lardons, mushrooms and onions and add a spoonful or two inside the pancake, roll up and put in a baking tray, do some more, top with more cheese sauce and grated cheese and grill.

    Any ideas?

    Melted chocolate, spread over one side of a pancake, then wrap it, then pour warm Grand Marnier all over.....

    I also do a stewed, spiced apple filling for pancakes. Serve with good quality vanilla ice cream.

    My family love chicken pancakes but to cook for seven people takes ages.


    Filling
    Cooked chicken, chopped onions(softened),mushroom (chopped and softened)
    Cheese or white sauce

    Fill pancake - roll up like sausage - place in oven proof dish - cover with sauce and grated cheese and warm in oven till hot and cheese has melted.

    I have this as a celebration meal - birthdays etc as it is so popular. It is also cheap but do not let on as it certainly does not taste that way :):):)


    Sweet

    Pancakes with ice cream and chocolate sauce

    Pancakes with any kind of fruit and yoghurt if anyone is slimming

    You could use sweetener instead of sugar if you want to keep calories down.

    jam
    choc spread
    condensed milk
    bananas
    cheese
    tonight we are having pancakes with a filling made with kidney beans, onion, carrot and ginger

    We had this one this week, onions, carrots, courgettes and mushrooms in a cheese sauce. Roll up pancakes, grate cheese over the top and stick in oven. You could pour cheese sauce over the top as Elona did in her recipe.

    I like to keep to tradition but have a super dooper executive deluxe version.

    Standard pancake but fresh orange juice (rather than lemon) from half an orange.
    BUT then to give it a bit of body and texture add the segments of a peeled and de-pithed mandarin, clementine or satsuma (some tinned mandarin segments will do if fresh not available)
    Then for some OOOMPH! add a generous measure of Mandarine Napoléon (orange brandy) similar to (BUT BETTER! than) Grand Marnier and Cointreau ! (these will do as a substitute)
    Add sugar to take the very sharp edge away and bring out the flavour.

    If you are feeling adventurous grab for the pepper mill and add a small twist of freshly ground black pepper.

    Black pepper has long known to be a flavour enhancer to certain sweet fruits, especially pineapple.

    Gently warming the orange juice and segments (and Mandarine Napoléon if desired) will keep this as a "hot" dessert and not arrive at the table just luke warm. Must serve on a HOT plate.

    A small dollop of vanilla ice-cream is optional

    Pancake lasagne: have tomato sauce (with beef/lentils veg, whatever you like best), white sauce and grated cheese, ready, then treat pancakes as if they were lasagne sheets and layer in a baking tray. Bake as necessary, enjoy!

    Or American style pancakes with lots of maple syrup and ice cream
