Low Fat or No Fat Baking for lunchbox ideas?

    line a swiss roll tin with greaseproof. pre heat oven to 200C/400F/GM6.

    in another bowl put eggs and sugar.

    place the bowl with eggs and sugar over another bowl of hot water and whisk using an electric hand whisk ( you can do it by hand, but takes a while ! ). whisk until pale and thick and creamy, and whisk leave a trail on surface when raised.

    lightly fold in the flour.

    gently stir in 1 TBLSP Hot Water.

    pour the mixture into the tin and gently tilt tin to spread mixture in an even layer.

    bake in the oven 10-12 mins till golden and well risen.

    WHILE CAKE IN OVEN, spread a tea towel out flat, and put a piece of greaseproof paper ( bit bigger than tin ) in middle. sprinkle with caster sugar.

    quickly turn the cake out onto greaseproof paper & teatowel.

    quickly spread with jam, and roll up the cake with the help of the paper.

    roll the paper ( and then i do the same with the teatowel! ) round the cake, (so it looks like a sausage) and leave to cool!

    does this keep well or does it freeze? I'm a bit tight about giving the kids treats every day so dunno how long it would last for?

    i made flapjacks over the weekend, and they would not come out of tin! where was i going wrong? they got eaten mind and the crumbs are used as ice cream topping

    My mum uses an old Marguerite Patten recipe for low fat sponge. She makes ds little cakes for his lunch box. The recipe is:

    4 eggs
    4oz sugar
    4oz flour
    pinch of salt

  • I agree with previous post about needing fats.
    My moto is: if ive made it and its eaten in moderation then its fine to have, as he does loads of exercises/runing around/outdoorsy playing... he is only 3 after all, so i dont expect him to be doing 20 press ups (yet :rotfl:) and its not as if he gets the whole cake to eat, although he would if i let him!:rotfl:

    his packed lunch differs every day, i do try and make sure things are not repeated the next day, as i know i get bored if i eatthe same stuff day in.... but its hard when i have to make sure their is no dairy as well...

    things i put in:
    *Wraps, sandwiches, rolls, finger rolls, pita bread,*
    fillings from chicken, cheese (goats or sheeps), tuna, sausage, jam, chocolate spread ({this is a month every 3 months when i have absolutely nothing in and too late to make anything}he can handle small amounts of dairy via chocolate - thanks to my parents on giving him it when i wasnt around!)
    pasta - spaghetti, bow ties, twists - own made sauce, is never the same twice :(
    Eggs - boiled and left in shell, nursery mash them with some of the butter i have given in, or if he want them whole, he has them whole. Or i mash them at home to put in the *sandwiches*
    Soup.. although he doesnt really like soup just now :mad:
    Always has veg with him, mostly cucumber as thats his fav. but i try and give him seasonal veg, like peas in thier pods, a wee bag of them, or i i by them shelled, a wee tub (he loves peas like that) sliced pepers, carrot slices/sticks, a little lettuce - he is fussy with letuce.
    always give him veg - apple/banana/pear/peach/plum, basically what ever is in season and cheap. i try and make up a fruit salad sometimes too, apples, bananas, strawberrys, blueberrys, melon, pear, etc etc... i add a teaspoonful of golden syrup and give a shake to coat the fruit, it stops it going off...
    we make our own shortbread/cookies and he takes one or 2 with him... sometimes i make banana cakes, apple n cinnamon cakes, (mix for a banana loaf, put in fairy cake cases and cook for 10-15 mins) fairy cakes... sometimes ill make old fashioned birthday cake (is that called victorian cake- sponge filling spong?)


    shortbread/cookie recipe

    100g butter/marg, 100g flour (any) 50g sugar (any)
    crumb together
    add *flavours*
    roll into big ball, break smaller balls off, place on baking tray and flatten with thumb or back of fork
    bake for 12-15 mins

    *Flavours*
    powders - 1 teaspoon- cinnamon, mixed spice, cocoa etc
    liquide - half teaspoon - tsp - vanilla extract etc
    sweets - 1 - 2 handfulls -dolly mixture, smarties, choc chips, hundreds and thousands etc

    if using dolly mixtures, id recommend watching the cookies, as they melt through and can pool into toffee on your baking tray - good for sooking on :rotfl:

    the recipe with give 12 good sized cookies, or 24 small ones... and 6 big ones :) (but in saying that, when u roll the big ball, it fits in the palm of my hand)

    Unless your son needs to lose weight for medical reasons, I would be inclined to worry more about how much sugar he gets rather than how much fat. Sugar is addictive, if I can phrase it like that, and when the sugar kick it gives wears off, it leaves you feeling hungry and irritable, and craving more.

    So make him cakes and biscuits with honey, add nuts or dried fruit, and don't worry about the fat you use in the recipe too much.
    You will probably find after a while, his craving for sweets and sugary things will lessen, as honey is low GI and doesn't cause the same highs and lows that sugar does.
