Low Fat or No Fat Baking for lunchbox ideas?

I'm trying to exert a bit more control over what DS (8yo) eats during the day and, as such, have taken him off of school meals and am sending him in with a lunchbox.

I'm pretty good at devising low fat or no fat savoury things, but I'd like to come up with some home baked goodies for his lunch box, to combat some of the yukky cereal bar things that his pals have in theirs. Yes, he feels as though he's missing out - and today (his first packed lunch day), was aghast that I wouldn't be including sweeties in his lunch box. :rotfl:

I've had a browse through the Mega Index Recipe thread, but its really difficult to separate out what are low/no fat, or could be adjusted to be low/no fat.

So, any ideas, anyone? (Or point me in the right direction if I'm missing a thread on this, already!). :rolleyes: Thanks!

    I make Bara brith with no fat (but it has a bit of sugar)

    Soak 8oz raisins and 8ox sultanas (you could use currants but I don't like them) in 1/4 pt hot tea over night with 6oz brown sugar.

    Next day mix in 1 egg and 8oz SR flour. Cook in a loaf tin for 1-1 1/4 hours.


    Cut off slices (or slabs if you are my other half)

    That looks nice, just right for packed lunches, can you just tell me the gas mark for the oven please.

    Ooh, now you're asking... I think I bung it in at about 150 c (I don't have gas, sob) but I'm afraid I'm a bit random with timing and temperature. Not too hot as it needs to cook through slowly without burning the top as it is quite dense and not too cold that it sits there all day.

    I tend to only turn on the oven to cook several things at once so they all have to take a chance at what temperature I cook them at. I won't put the oven on for just one thing (wish I could teach SD that one)

    I stick an old very fine knitting needle in to test if it's cooked.

    Okay no worries, I'm still on sticking ridgedly (sp) to a recipe. However, I reckon it would be about gas mark 3, I'll have a look in my manual.
  • Thanks, Dumpy, that sounds fab! Its another way of presenting dried fruit, as well. He's taken a little pot of apricots and sultanas with him today - but having a piece of something that looks more desirable would be great. I'll definitely give that one a go, as I can balance the carbs and sugar in other ways. :)

  • Slightly OT, but if he wants sweets and you want fruit, then what about yoghurt coated dried fruits and banana chips - Holland and Barrett even do the raisins in coloured (fruit flavoured) yogurt.

    Ok, so there's going to be sugar in there, but at that age they should be running it off anyway. My 5 year old loves them (only gets a few in each lunchbox though - and still with normal fruit etc)

    Will watch this thread for other ideas though - struggling myself to get much variety in there right now (new term and he's decided he doesn't like half of what I used to send)

  • Its a great idea, but unfortunately (at the moment) I can't afford H&B's prices. :( If and when that changes (or I find some cheaper elsewhere), I'll give it a go. It'd certainly ring the changes and he'd enjoy them, too. Thanks!

    May I ask why you feel that you want to give him low or no fat items? I know that too much is bad for children and I certainly wouldn't advocate chocolate every day but I'm sure I've read that they do need a certain amount of fat in their diet while they are growing.

    Good quality homebaked items such as flapjacks with fruit that you know don't contain chemical additives and preservatives woud be a healthy snack to give him.
  • They're not actually that badly priced - I paid £3.12 for a bag of the coloured yogurt raisins and a bag of yogurt banana chips the other week - and with mixing them with other things at the rate I let him have them, it's 2 or 3 weeks supply if not more.

    Choccyface 2006 posted a recipe for weetabix cake a while ago,no fat and only a cup of sugar.I made it last weekend and it was eaten in minutes by my mob,put weetabix cake in the search box. good luck
