Low Fat or No Fat Baking for lunchbox ideas?

  • I make fairy cakes quite often to have around if we have visitors and my husband's workmates are always jealous if he has some in his lunchbox! Basic Victoria sponge recipe, not no-fat but the only fat in there is from flora or other sunflower spread suitable for baking. You can also put sultanas, chopped dried apricots or cherries in etc. Plus it's something he could learn to make with you!

    Does anyone have any ideas of a sweet treat I can put in my DD's lunch box?
    At the mo I have cut out thinkgs like crisps and biscuits.
    They have a sandwich, yogurt, and fruit but I would like to put something healthy and homemade in too. I used to buy cereal bars but the amount of sugar they contain amazed me!
    Any help/suggestions would be greatly appreciated.
  • You could make your own flapjacks, also I make a mincemeat tray cake with low sugar, no one knows it hasn't got real sugar in. Also check out a web site called Chef Jennas. She makes low fat chocolate fudge, using dates and nuts instead of sugar.

    How old is DD?

    Don't be too keen to give her a "low fat" diet as a certain amount of "real fat" is necessary for healthy growth in kids - hence, whole fat milk is recommended up to a certain age.
    Warning ..... I'm a peri-menopausal axe-wielding maniac ;)

  • why not make own jam tarts husband has these for his packed lunch at mo as we had left over pastry from a pie i made.

    also boxed raisins (buy some boxed ones then keep boxes to refil from a large packet)

    babybel cheeses or my husband cubes his cheese into portions and takes on clingfilmed as this is cheaper

    making any cakes is cheap and healthy is you add bananas or dried fruit
  • i forgot something we love which must make fridge cake

    cornflakes, chopped apricots and some dried raisins/sultanas and mixed with melted choc - dont know eact quanitities but use a 200/250gram bar choc then guestimatethe rest.

    grease or line a deepish oven tray and then fill with the mixture we do a thinnish layer then put in fridge til set and then cut into portions

    swiss roll is good! looks like a real treat, but apart from eggs ... no fat!

    i put jam in it, but you could make a chocolate one with chocolate spread in the middle!

    ( having typed it out, it looks like alot of effort to make, but its quick and easy really! ) i don't know where the recipe originally came from, i've been making it since i was at school!

    swiss roll
    3 eggs
    100g caster sugar
    100g plain flour
    hot water !!!

    extra caster sugar
    jam for middle

    line a swiss roll tin with greaseproof. pre heat oven to 200C/400F/GM6.

    measure and sift the flour into a bowl.

    in another bowl put eggs and sugar.

    place the bowl with eggs and sugar over another bowl of hot water and whisk using an electric hand whisk ( you can do it by hand, but takes a while ! ). whisk until pale and thick and creamy, and whisk leave a trail on surface when raised.

    lightly fold in the flour.

    gently stir in 1 TBLSP Hot Water.

    pour the mixture into the tin and gently tilt tin to spread mixture in an even layer.

    bake in the oven 10-12 mins till golden and well risen.

    WHILE CAKE IN OVEN, spread a tea towel out flat, and put a piece of greaseproof paper ( bit bigger than tin ) in middle. sprinkle with caster sugar.

    quickly turn the cake out onto greaseproof paper & teatowel.

    quickly spread with jam, and roll up the cake with the help of the paper.

    roll the paper ( and then i do the same with the teatowel! ) round the cake, (so it looks like a sausage) and leave to cool!
