Probably not alot Frazzbo. I'd think one/two average size courgettes. I made courgette chutney at the weekend and that used 1kg of courgettes. It worked out as about one and a half of the large courgettes/small marrows we seem to be producing!
Might have to buy that book!

My favourite two meals are:
Griddled courgette and haloumi cheese sandwiches - so quick!
Stuffed courgettes - scoop out the inside and chop along with garlic, basil, onion and tomatoes, fry up in butter. Brush shell insides with oil and cook shells for 10 mins then stuff them with the cooked mixture, top with cheddar cheese and put in the oven for another 15 mins.
I'm having courgettes nearly every day at the moment, interspersed with beans and potatoes
