I have four plants that are producing so much I am fed up eating them and can't give enough away. Problem solved. I found a site with recipes for allotments produce and a great one for courgette soup. Made a batch and it tasted so good I've put it in freezer as I've another four pound of courgettes to to use up and about another two pounds to pick. I do not know how to paste recipe on here and if it is allowed but the site is Allotment growing month by month. www.allotment.org.uk/recipe. Its a site by John Harrison. Hope this info may help others with the same problem.

I have just 1 courgette plant, it was an experiment and I am amazed how easy they are to grow, I will definately be growing more next year. Thanks for that amazing link, just what I am looking for, I will need recipes for when my tomatoes ripen, I will have more than I know what to do with.0

Funny I made courgette soup last night too! I had 7 from 3 plants.
I didn't use a recipie as such - I just made it up as I went along and it tasts great!
I used 3 medium sized potatoes, 4 of the largest courgettes and some garlic. Chopped it all up and put it in a pan with enough veg stock to cover (1300 ml in this case) and gently simmered until veg was soft. Whizzed up using a hand blender and added salt/pepper to taste.
Had some last night and still enough the fridge for tonight as well.
Not sure what I'm going to do with the other 3 - more soup!:rotfl:

courgette chutney is really nice too

Big onion, garlic fried gently in butter and olive oil.
Add as many courgettes as you can get in. For us this an awful lot, as we have alot of courgettes and big pans.
Fry for a few minutes, then add veg stock. Add a bit of curry powder and a bit of chilli powder if you want.
Bubble along for a while, then wizz up. Add pepper to suit.
Really uses up those courgettes and freezes well too.Freedom is not worth having if it does not include the freedom to make mistakes.0 -
I made these courgette muffins the other night from allotment.org. I did wonder about the amount of dried milk but I guess that's because the courgettes have a lot of water in them. They were very good:) though I say so myself! I have eight plants by the way:eek:.0

It's the first site I go to when I have a glut of anything. Recommend its tomato soup recipes as well0

Baked courgette, onion and garlic yesterday, with a dash of tomato sauce, a glug of wine and a sprinkling of sugar. Lovely - reminded me just a little of Delias braised red cabbage in her crimbo book

Do courgettes produce more after you have cut off the ripe ones? Does anybody know when they stop producing?0 -
