Somegreat ideas on here. I saw the recipe for courgette cake and muffins on the site and wondered what they would be like. Glad someone has tried the muffins as I will now have a go at them. So far I have five containers of soup in freezer as we are busy eating salads to use up the glut of lettuces. The caulies have all matured at once so having to make bakes and freezing the rest. As I said on here before my aim for the future is to grow little and often. I really fancy a good plate of sausage and chips but have too much healthy food hanging about. Runner beans are now taking off so have to do meals to use these up as well.
One thing I felt pleased with was the potatoes, garlic, basil, onions and courgettes have all come from allotment.

Yes, it's definitely a case of "Oh no, not more courgettes" round here too!. I now check the plants daily and pick them when they're about four inches long, so they can also be chopped and eaten raw in salads. If anybody finds them indigestible when boiled, they are much nicer sliced lengthways, lightly coated in oil and cooked on a griddle until lightly browned. Grilling them with oil works in the same way. It seems to bring out the natural sugar in the fruits.0

I found this via google last year, really really nice loaf, no yeast used, more like a kind of batter that you cook in a loaf tin. It was easy to make (my kind of cooking!), gorgeous to eat and freezable too. I made it several times, used different cheeses each time (Red Leicester, really strong cheddar etc), would def recommend it with a hearty soup (not courgette though, work of the devil in my opinion) or with a salad.
We also made a kind of spicey stew using chickpeas and ratatouille made with the courgettes, that froze brilliantly and we ate it a lot during the winter. Basically I just use any ole recipe that says say, carrots, and sub courgettes instead. Lasagne, three bean stew, even just chunking the courgettes, light saute, leave to cool and then open tray freeze. They're fine in pastas, casseroles etc.0 -
My Grandkids apparently don't like courgettes :eek: So far this week they've had them grated into Cottage Pie, finely diced in a rissotto, thinly sliced with liver and bacon and tomorrow they're getting them on pizza! They're only here for two weeks but it's courgettes everyday lol, now where did I put the muffin recipe? :rotfl::rotfl:Sometimes not moving backwards is as much an achievement as moving forwards is on other times. Courgettes are deffo one of the best plants to grow I think. So easy, pretty and taste greats and very prolific. Got one this year and I think 3 planted 10 days or so part would be ideal next year.And if, you know, your history...0

My courgets only just started and yesterday I made turkey burgers and mushed couple of courgets in it. The kids loved it and never found out about my magic green ingredience.
I make a lot of pasta sauces out of courgets it gives it a volume and is much nicer than from shop. My recepy is - some onion , garlic , fry it up add chopped up carrot, tomatoes courgets, oregano, basil,coriander,pine nuts(sometimes) or different herbs & beans and finaly liquidise to smooth paste and no one know whats in it. What I love about it that each time it`s different , because I put in something else I can find kicking around the house. This can be frozen and it lasts in the fridge long enough too. I have put it on sliced potatoes, aubergines with mozzarella , parmasan cheese, mhh lushes:)
There is a flapjack recepy on google haven`t made it yet , but sounds good.0 -

I like the sound of the courgette and cheese loaf mentioned by somebody earlier, and I found a recipe (i think it's originally from Asda)

It calls for 200g of courgettes (actually it misses out the key word 'courgettes' but I get the idea
), and I was wondering if anyone has any idea how many courgettes that might be? I don't want to pick too many and then they all go off before I get a chance to use them! 0
