Given a 1:00am departure time was there much point in having a room for the 7th night? They'd be going to the airport at 10:00pm

There is if you've paid for it!

Indeed you either paid for 6 nights accomodation or 7 nights accomodation. What does your paperwork say?

How many nights will you spend in the accomodation ? Most TA's adverts state 7 nights and never 7 days.

7 nights would be 8 days then, best to book without travel agent

But did the OP pay for it? I'm getting confused. I would have thought that they paid for the holiday that they got - if they had an extra night, it would have cost more, yes?

Maybe I just don't understand how these things work since I'm a DIY girl. :)

Until she comes back and tells us what it says on her paperwork we won't know for sure but if her paperwork said 7 nights, then yes, she did pay for it.

Most package holidays are 7 nights, not 6, so if her paperwork says it's a 7 night holiday she's been diddled.

night 1 Friday (arrive early Saturday am so room booked from prev evening)
    night 2 Saturday
    night 3 Sunday
    night 4 Monday
    night 5 Tuesday
    night 6 Wednesday
night 7 Thursday (room should be available right up to depature for airport)

night 1 Friday (arrive early am so room booked from prev evening) if they arrived at 2am on the fri morn and the room was booked for the Thurs night, then Thurs is the 1st night of the holiday
    night 2 Saturday
    night 3 Sunday
    night 4 Monday
    night 5 Tuesday
    night 6 Wednesday
night 7 Thursday (room should be available right up to depature for airport) if the room was booked for the prev thurs night, then they must leave the room on the thursday as that is when their 7 nts would finish. their last night would be the Wed.

if they arrived 2am on the Fri morn and the accom had not been booked for the previous night, they wouldnt be able to get into their room till normal check-in (sometimes 2pm or 4pm)

to have the room available till they depart would be an 8 night holiday

Sorry, you misunderstand. Friday was the first night of the holiday, not Thurdsay. She departed UK Friday night, arrived Saturday Morning, so hotel would have been booked from Friday afternoon.
