    You can absolutely freeze cooked sausages, no problem.

    Will casserole some for DH tonight, cook some to have cold tomorrow (with jacket potato and cauliflower/broccoli in cheese sauce)

    Maybe I'll add the others to the casserole, as I'm cooking that anyway, and refreeze in individual portions

    Haven't got loads of time as I've got to make my DD's 18th birthday cake as well, and need to go out just after 6 o'clock.

    you can refreeze it once it has been cooked and allowed to cool, you can't refreeze it once defrosted and not cooked.

    You could do a sausage birthday cake.

    I've promised her a triple chocolate chunk cake with chocolate frosting and chocolate flakes on top, not sure a sausage cake would go down quite as well :D

  • What about meatballs?

    Slit them open and chops them up into 4's and roll them into balls. Fry them off and add a tomato sauce. Serve with pasta/spaghetti

    That's absolutely right - you shouldn't defrost and then refreeze meat unless, as frugal says, you cook it first.
  • Splitting them open and taking the meat out gives you a few more options too. Crumbled up and cooked for ages till crispy, with fried rice and veggies with some tomato puree is scrummy.

  • Yep, to echo what folk are saying…you shouldn't defrost and then refreeze meat when it is raw, but if you defrost, cook and then freeze there is no problems at all….infact I am about to do exactly this…I defrosted some beef chunks and bacon earlier, I have made a massive casseroley thing in the slow cooker, and some of it will be portioned up and frozen.

    Thanks for all the suggestions, I love how helpful people always are on the OS board :)
    After making the birthday cake (and resisting the temptation to nibble on the chocolate chunks :o ) I ran out of time, so put some in a casserole, DH will eat one portion for dinner tonight and I'll split the rest into a couple of portions when I get in tonight.
    The rest I stuck in the oven at the same time, on a baking tray and we'll have those cold tomorrow.

    I might try some of the other suggestions another time.
