Not necessarily just for Christmas but I always make it then and it coes down a storm, and it is really easy.
3 large egg whites
1 pint Double Cream
8 crunchies
cadburys flake
Whip the egg whites until they are stiff. Whip the double cream until it is "whipped" (Ha) and then fold the egg whites into the cream. Then bash the crunchies with a rolling pin (the best bit) until they are tiny pieces. Add them to the mixture. Then put a flake all over the top for decoration. Chill in the fridge for at least 5 hours. Overnight is better because the crunchie melts and turns the mousse yellow.
This pud is very sweet and you won't need alot of it but it is gorgeous!!0 -

i would look for the posh pre prepared stuffing from supermarkets - it often gets put in the discount fridge and you can freeze it, it will impress too!
Also, look on your local market for veg - it can be incredibly cheap compared to supermarkets, and sometimes better quality!
You can usually buy things like pudding now and tey keep lovely.
Buy things like gravy and stuffing mix now, they add up if you buy it all at once!
Also, try putting away a couple of quid away a week for the turkey - a decent turkey for 6 should cost about £8 frozen, but much more than that fresh (I think - it' a couple of years since I cooked a big meal!).

I make themed birthday cakes for the kids and there are always offcuts of cake after I've shaped it into a car or teddy etc

Mincemeat Bundles
This look good and apparently taste good too. I've cooked them but never eaten them as I don't like mincemeat.
For 12.
12 sheets of filo pastry
4oz unsalted butter, melted
10oz mincemeat
3 clementines, peeled and chopped
icing sugar to dust.
Preheat oven to 200c/400f/ gas 6.
Butter baking sheets.
Cut filo squares in half to make 24 sqaures.
Brush one square with butter and cover with another on an angle so it looks a bit like a star shape. Hope that makes sense!
Put 1tbsp mincemeat and some clementine in the centre. Pinch all corners together to create a bundle and give the pastry a little twist at the top.
Bake 10-12 mins.
Can be served hot or cold dusted with icing sugar....it is not of more importance than daily life, which I have an enduring wish to make as useful and beautiful as possible.

At the risk of blowing my own trumpet, my apricot and walnut stuffing is to die for:o
1lb good quality sausages skinned and meat removed
4oz dried apricots
2-4oz walnuts or pecans depending on how nutty you want it
1 tablespoon of fresh sage or a 2 tsp of dried
1 large or 2 med onions, finely chopped and sauted
at least 2 garlic cloves crushed and sauted with the onion
s+p to taste.
Mix altogether and use some to stuff the bird and the rest into balls to serve separately.

This sounds delicious - I'll definitely be trying this for the Christmas turkey.
Foreverskint, do you usually prepare this when you're cooking the turkey, or would you prepare and freeze well in advance?

Both Lidl and Aldi usually stock 4+kg turkeys about a month or so before Christmas priced @ just over a fiver.0 -
