on the crumble subject (this thread moves so fast that that conversation may seem like pages ago)...i have discovered 2 great tips for making great pastry..... 1. to keep pastry light, you need to rub the flour and fat together with really cold hands. the easiest way to get cold hands is to run the inside of your wrists under the cold tap, they become cold v. quickly and then when you rub the ingredients together, lift the flour and butter high in the mixing bowl to incorporate air. 2. I also add an egg yolk to the pastry which adds to and let the pastry sit for about 15 minutes at least before rolling out - it lets it rest.
(for mse purposes you can store the egg whites in the fridge for a couple of weeks and use to make meringues - staler egg whites make much better meringues).....
i love adding nuts to my crumble - or even crushed cornflakes, makes it nice and crunchy.

Oh it is chucking it down here still! I am not running until 9, so hopefully it will have stopped, although I don't mind running in the rain. Whereas I hate running in the strong wind, so getting wet is far easier than that!
