Yes, I always use the bone. I do ham hocks in the slow cooker now, then next day, I put any cooking liquid back in the slow cooker with the hock bones, water, whatever chopped veg I feel like & a big handful of yellow split peas. It makes a really nice ham & split pea soup. You still get a hammy flavour even if you don't have any ham to put in it. If I have any tiny little bits left, I always put them in. The soup freezes well too. If I just make stock with the hock bones, I freeze it and use it with a box of those dried peas (for mushy peas) to make soup later on. Yes, it's the same basis as using chicken bones to make stock, and you don;t have any meat with that either... sounds like it'll make a nice stock! i always do mine as a soup first(ham hock/carrots/chickpeas/onions ets and simmer for 2 hours) then i remove the hock and roast it for 30+ mins..serve the hock meat with peas and new potatoes and keep the soup for the next days 'soup and sandwiches'...yum0

Thanks everyone. I normally boil bacon or hocks then use that stock, plus a bone if there is one to boil up to make soup. I cannot remember ever roasting one-the recipe on the site uses a whole hock including meat for the soup, which is what I sometimes do, and I just wanted to check that I would get a full flavoured stock by just using the ham bone. Its what I do when I make chicken stock, so not quite sure why I was hesitant.
Don't really have any room for stock in the freezer though so reckon will have to just freeze the bones!0 -

I would say the stock would be lovely too. When i roast a chicken, i then put the bones in to roast in the ovn to bring out the flavour so I can't see how this would be any different.

Please can you all help me with some suggestions of recipes that I can make from a ham shank (the one with the bone through the middle)????
I had a voucher for £10 off a £40 spend at my local farm shop and one of the bargains I picked up was a huge ham shank for £2.50 but now I'm struggling to know what to do with it? I've never bought one before but it seemed like such a bargain!0 -
Hi proudmum,
I usually leave a ham shank to soak overnight, then throw the water away, add fresh water and bring to the boil and simmer until it's cooked. Then I strip off the meat and use half of it to make a pie. The stock left from cooking the shank makes fantastic lentil or pea soup, then I add the remaining meat to the soup.

I have one in my slow cooker today making stock . I usually make lentil/carrot soup but i may try pea soup for a change
I have it on my to do list to read up on as I don't know if the peas need soaked etc...... I bought them loose so have no packet.
I got a HUGE shank for £2 - the butcer gave me the biggest one!:j:money:A little nonsense now and then is relished by the wisest men :cool:
