    I bought one already cooked from my butcher last week. Took all the meat off, then put the bones, jelly and skin back in a saucepan with carrots, an onion and a stick of celery and boiled for an hour. Then drained it, added some red lentils and made ham and lentil soup.
    The bacon will be cold with mash/chips, and used in macaroni cheese and stir frys.
    Cost me £2.50 by the way.

    I bought mine from MrM, I think they are about £1.70 each, but when that makes one dinner and two lunches for two people, its very cheap.
  • Actually, in culinary terms the hock is essentially the forearm of the beast, pig, sheep, whatever. Cheap as chips, it forms a part of 'hand and spring' on a pig. I would suggest cooking long and slow in a very low oven, to get crackling and melting meat, as for shoulder. Ham I'd cook with root veg covered in water for an awesome stock, and use this for soup, and the meat for another meal. Either way, you can tell it's cooked when the thinner bone (Radius) will pull out clean....
