The last one I got I did in the pressure cooker for about 45 mins (not quite long enough, tho it was fine) with onions, carrot and about 3 slightly shrivelled eating apples. I pulled all the meat off the bones and used some of it for a nice supper with parsley sauce. I did a parsnip (and apple) soup yesterday using the strained liquid - and it was really good, the apple was subtle but just perked up the rather boring parsnip, and last night I whizzed the last few meaty bits with some old bits of cheddar cheese and some Hellmans. We will be having that grilled on toast for lunch. And the original hock only cost me 1.79 in Morrisons. They really are good things !
PS Hugh F-W is very rude about them in his 'Meat' book, but what does he know about eating thriftily I wonder !0 -

simmer it in sc or a pan , strip off the meat and use it in pies, risotto, with pasta. I find the stock quite gelatinous and sometimes salty so use it half and haf with water in soups with lentils root veg etc etcPeople seem not to see that their opinion of the world is also a confession of character.

I put one in my SC overnight Sat/Sun, once it had cooled a bit I drained off the stock into a bowl and the hock onto a plate. Left them both to cool right down, pulled off the meat and put it and the bowl of stock into the fridge. Then gave the skin and fat to the dogs on their biccies! Today I made pea and ham soup with a 250g packet of dried marrowfat peas that had soaked over night, an onion, two stalks of celery a very small potato and the stock. Boiled for 30 mins, blitzed it, and then added some shredded meat. Lovely with some HM bread. Then tonight we have the rest of the meat, a whoopsied chicken breast and some mushrooms to make a pie with HM shortcrust pastry and HM parsley sauce.
Plus we have enough soup for tomorrow as well. A very frugal day!0 -
