    You can get them in Sainsburys (own brand) or napolina.

    HOWEVER, I'm not sure I really like the whole cheey toms in it & I think next time I will use good quality chopped toms (like napolina).

    But its REALLY lovely, nicer than Nigellas. Looks good too, like you would expect it too, all red & rich.
  • Hello, I'm a bit of a lurker on your board, but need some old style advice..

    I've got 2 packs of red chillis in the fridge that need using quickish, and also a heap of preserving and jam sugars.

    I was wondering - can I make a chilli jam with tinned plum tomatoes instead of red peppers (very expensive atm) and the preserving sugar? Will I have to do extra boiling because of the tinned toms?

    Also, could I freeze any extra chillies?

    I've not checked the dates on the sugars, but they were bought before Xmas - do they tend to keep well? (Sorry, I'm a little disorganised!)

    yes I think it would be lovely. Delia does a chilli jam with toms rather than red peppers, and my friend has made it with onion instead of peppers, very successfully.

    You can also pickle chopped chillis in white vinegar to be use as and when.

    Chillis freeze very well - freeze them whole and chop them as you need them from frozen.

    Google 'chilli jam tinned tomato' for lots of recipe options
  • Sugar will last for years if it is sealed in the packets. Back in the 1970s there were sugar shortages and our local shop used to save a bag a week for all its "regulars", who didn't dare turn it down in case the shortages went on and on. My mum reckoned she had at least 5 years' supply at one stage, and the only problem was that the stuff in open bags went a bit "grey" (from dust etc - yuk!) or hard if it got damp. She used to put it in plastic boxes and we lived off it throughout my childhood!
  • Use jam sugar rather than preserving sugar with the chillies. They need the added pectin to help the jam/jelly set as they don't have much of their own.
    I think tomatoes would work well - hope you find a recipe.

    I made Nigella's Chilli jam for Christmas pressies. It was a bit runny (make sure it boils really well) but very tasty as dipping sauce, with cheese etc.
    Ooh, and wear gloves when you chop/handle the chillies if you can.
    Even after washing my hands, I inadvertently rubbed my nose (which was already red and sore from a horrible cold) with my finger - it didn't half sting!

    ive merged this with the chilli jam thread . What did you decide to do in the end? I can't imagine it with tinned to mates but that's because I'm such a big chilli jam fan! I need to get more jam sugar myself

    I always freeze chillis in a bag and chop from frozen.

    I had exactly the same thing with my Nigella chilli jam - I wish it would have said in the recipie that it is a jam on the runny side - I worried for ages about it. Not actually used my jar yet (the one I kept for myself) but hope it was ok as the others were given away for prezzies too!

    Know what you mean about the 'after effect' of chillis - I've rubbed my eyes several times after chopping the little blighters....:eek: Luckily my wonderful brother bought me a mini-chopper for xmas so that should be a thing of the past.
