Hello,
I hope you are all well.
Looking for a little bit of help. we are expecting a glut of cooking apples and red chillies.
rather than making tonnes of apple sauce and drying chillies
I am sure i seen a receipe for Chilli jam using cooking apples too. I got a jar from a rather posh farm shop and nearly died at the cost but was at the point of no return for paying.
Does anyone have a recipe that sounds like this ?
Thanks in advance

The only thing that I would say is that if you squeeze the pulp, your jelly will be cloudy - it will taste as good, but look so nice.
Not sure on your situation, but if I were you, I would make up a good few pretty jars with labels, and maybe scrap fabric lid covers. I'd use them as gifts, to give for fund raisers, or even sell at the garden gate.
1 pot makes a nice gift, but goes a long way!
You can use the same process to make herb jellies - I love rosemary jelly with lamb; mint & tarragon are also popular. When I make herb jellies I add a teaspoon of cider or white wine vinegar (per kilo of fruit) towards the end of the first boiling - it helps it to clarify and sharpens the flavour (but I have never made chilli jam)0 -

We also have a thread on using up cooking apples which may help
I made "chelly" (chilli jelly) using this method of thriftladys and it was beautiful. The way you do it makes it turn out clear and crystal. Must save that post, took me donkeys to find it.
let us know how you get on
