    I make chutney all year round, and provided you have sterilised your jars and sealed the chutney with waxed paper, it will keep for up to a year. I use the mary Berry Christmas Chutney recipe, and it recommends standing for at least a month before using, so I would be making Christmas Chutney now, to give it time to mature.

  • I think most chutney recipes suggest leaving for a month for the flavuors to mature - sometimes longer; relishes I believe can be used sooner but maybe don't keep so long?

    Thanks, I'll probably start over the next few weeks. I don't have any waxed paper to seal the jars though-where would I get this from?

    you dont need wax paper if your jars have lids with a seal disc inside
    chutneys will keep much longer than 12 months,
    they will taste better after 4+ weeks of maturing though, i prefer at least 10-12 for most that i make

    I don't use waxed paper for my chutney either, you can ge the discs from lakeland.

    Hi everyone.
    I've been lurking on her recently and have got so many great ideas - thanks everyone.
    I really liked the chutney and jam ideas for Christmas presents (these are going to be presents from our daughters) so popped to ikea yesterday to buy some jars and we made our first batch of apple and cranberry chutney this afternoon, it tastes lovely and could have quite happily eaten the lot then and there!

  • I made some Chilli Jam over the weekend and it looks fab-the chilli/pepper flecks look really cool. I've also made some onion chutney. There was another chutney I made last year that went down really well but cannot remember what it was! I think I got the idea from this thread so will have a search through to see if I can find it.

    Lou05 - could you give me the recipe for the apple and cranberry chutney. I've loads of apples but a bit stuck with what to do with them! Only so many pies I can eat.
  • Feeling pleased with myself today cos I managed to make my mincemeat using apples given to me, & pear & lemon jam with pears also given to me! Some for hampers, maybe.
