Good Luck with your £10 challenge, don't get too disheartened with not being able to afford expensive goodies, you can still eat healthily and just think of all the £££'s you are saving. A number of years ago I was on a very limited household budget and many of the recipes I learned then are still used by me today.
A favourite is Fettucine with Walnuts and Butter - sounds posh but is so simple and very good. Also walnuts are rich in thiamin, vitamin B6, folic acid, iron and zinc.
200g dried fettucine ( or any other pasta will do), 25g shelled walnuts, 15g butter or tablespoon olive oil, 1 garlic clove, salt and pepper.
Cook the pasta in hot water, meanwhile spread the walnuts on a baking sheet and place under a hot grill for 1 to 2 minutes until lightly browned. Leave to cool slightly then place in food proceesor or grind with pestle and mortar or hand grinder. Careful not to over process as they go very oily.
Drain the pasta and return it to the pan with the butter or oil and garlic add the ground walnuts and mix until evenly covered. Serves 2
Most supermarkets sell small packets of chopped walnuts in or around the bakery aisle, otherwise health food shops.
