Evening all :hello: I hope everyone is well. Work is very busy at the moment due to the very volatile elec & gas markets. So, I thought I would take in some cake for the troops - a recipe I brought back from our honeymoon. We stayed in a small country house hotel and instead of those two plastic wrapped biccies you usually get on your tea tray in the room, there was a lock 'n' lock with HM cake! (Possibly an OS hotelier
)
Anyway, I blagged the recipe as it was so delish. Everyone loved it at work too
It's a very moist traybake with sultanas. I like recipes where the baking tin is specified as a roasting tin.
On another note, I swapped a jar of HM plum & apple chutney for three tom plants, a squash and some leek plants - also at work - we do actual work too, honest!

Well, really poo sort of day. Up just after 5 as ds was going up to London for a Uni open day. This cost more than planned owing to the fact that someone (me!) booked his return ticket (non changeable or refundable) for Saturday instead of today and I had to book another one at £35.
Slept for a while on the sofa while my tea went cold when I got home. Arrived at Physio too early ( didn't realise till after the event, as he had had a cancellation) and got leaned on hard. In big pain after several better weeks. He suggested i saw the doc about meds to help with the pain. Turns out that these are antidepressant with the pain killing side effect. I already take antidepressants for the whole of the winter for my SAD, so don't relish the thought of them over the summer too. Side effects etc. I managed to get an appt with the doc within half an hour of calling. .Not sure how that happened.
got to work, to find that my student had called in sick. Came home for a bit. Back for another student who elected not to do anything for the first 2 hours of a 2 1/2 hour session. Third one didn't turn up.
Supposed to be singing somewhere this evening for a charity walk event, but don't feel up to it, so rang and apologised. Kids going on a folk festival. Hubs been away and out of contact nrly 2 weeks now, so really starting to feel fed up. Another week to go. I ought to pull myself together really. Thought of visiting my parents, but it's a 2 hour drive and I've been given warnings of sleepiness from the medication from physio, doc and chemist. So I guess that's a no.

Having just typed up the recipe for DD1, I thought I would share it here too
Ingredients
1lb dried fruit
8oz Demerara sugar
10oz sr flour
3 eggs beaten
8oz marg/butter
Method
Cover the fruit with water in a saucepan and boil for 12 mins.
Drain fruit & cut in the marg or butter
Add remaining ingredients, reserve 1 dsp sugar
Mix well and put in lined roasting tin. Sprinkle over reserved sugar.
Bake for approx 35 mins at 160 c
Morwenna's notes: I use golden sultanas as they were what they used (I think!)
Boil fruit for somewhat longer than specified or until it looks all plumptious (it's a word if I say it is
)
Get the butter/marg in whilst the fruit is still hot.
No really, use a roasting tin!0 -

Hi all, I hope every one is okay I have had quite a busy day shopping,cooking and getting some of the cleaning done.
JackieO I have a carrot cake recipe that I use it is very nom nom nom
American Spiced Carrot Traybake
10 oz (275g) self-raising flour
12 oz (350g) caster sugar
2 teaspoons baking powder
3 oz (75g) walnuts chopped
3 teaspoons ground cinnamon
2 teaspoons ground ginger
10 fl oz (300 ml) sunflower oil
10 oz (275g) carrots, grated
4 eggs
1 teaspoon vanilla essence
For the topping I buy the ready made butter cream from Tesco.
Pre-heat the oven to 180oC/350oF/Gas 4.
Grease and line a 12 x 9in (30 x 23 cm) roasting tin with greased greaseproof paper.
Measure all the dry ingredients into a large bowl.
Add the oil, grated carrots, eggs, (one at a time) and vanilla essence, mixing well between each addition.
Pour into prepared tin.
Bake in the pre-heated oven for about 50-60 minutes or until the cake is well risen, golden brown in colour and firm to the touch.
Allow to cool in the tin for about 10 minutes before turning out on to a wire cooling rack and allowing to cool completely.
Spread the butter cream topping over the entire cake, cut into pieces and enjoy.WW start date 31/8/2011 :j

Evening All
Lovely day here again, started off a bit grey but warm enough. Once the cloud burnt off it was scorching. Managed to strim and cut the grass - don't think it had grown very much as it has been so dry.
Stripped my and DDs beds, all dry just the ironing to do but not today! DD and I had a joint effort at spinnach and ricotta canneloni and I have to say it was jolly tasty.
Happy Anniversary Mr and Mrs JackieG - shame Mr JG can't be with you but enjoy the beach tomorrow.
Flutterby, glad your course has been approved - will they pay for any of it?

Hi all Thank you booskyeboo for the carrot cake recipe and also to Morwenna for the tray bake I have copy & pasted them into my online cookbook .Cheers I shall be doing some cooking tomorrow after I come home from Uni.
Also cheers to Donny-gal for the info re the turkey steaks,just couldn't not buy them at that price ,enough for two meals with added veg for me at 90p a bargain.
Just watched the England match and I'm not an expert and know very little about footie, but I don't think they were really putting much effort into their match.Perhaps they will get a rocket up their rear and try to win a game next time

Evening all, A very quick and short post from me. Firstly himself is using my lappy:( for exam stuff. He has just logged off for a short break(if I didn't get to see my beloved donkeys for yet another day there would have been blood spilt) and also the glass of wine I had this evening has morphed into more than a bottle so my logic/keyboard skills are worse than ever:D:D
