My only tip would be that it's easy to overfill mince pies. Then they dribble and get stuck to the tin. My friend makes them in cake cases, which solves the problem0

I watched Nigella Lawson this morning and she made her own mince meat. It looked very easy.

This will probably get me drummed out of the OS brownies but........
I have before now bought a large jar of value mincemeat and turned it out into a bigger kilner jar then added lots of ground nuts, orange zest and chopped up apple (nice for a lighter mincemeat mix) and then stuck in a load of brandy (or you could do orange juice or good apple juice). Then leave for a week or so, turning the jar from time to time. I'd just dishwasher a jar and use it straight away - that's sterile enough for a couple of weeks.
I'm sure posting on the OS board you're committed to making your own pastry. However, if I'm too busy before Xmas, I buy some chilled pastry and, instead of using flour on the board for rolling out, use ground almonds.
I guess it is not an answer to the 'from scratch' question, more a 'cheat's guide to making it taste like from scratch'.
That is blasphemy, I tell you!

me bake all my mince pies in her oven
I cook electric she is gas
can any one out there tell me
what number to cook my pies I usually cook
175 degrees fan oven
what number over temp is the same equivelant
on gas ?

I cook mine 'on gas mark 6 for 15-20 minutes [I normally go on when things smell cooked though rather than exact times]0
