Out local bakery always has a puff pastry variety of mince pies and that is how I make mine. They would be even nicer with Filo, much less 'claggy'. Of course short crust pastry is one of the easiest things to make....loads of recipes online.Ermutigung wirkt immer besser als Verurteilung.

Check out Lorraine Pascal. Her 'last minute Christams' show was on the other night and she made mince pies in a kind of star shape using puff pastry. Looked dead easy and yummy.

ok - I think you could adapt a Delia Smith recipe with the filo pastry and the mince filling.
make mince crackers! take a sheet of filo pastry and cut it in half - then put a tablespoon of filling in the middle and roll up - make cracker shapes out of it - or if thats too much fuss - cut the filo into squares and make 'purses'. (which is incidentally what I am doing this year) and cook in a hottish oven until the pastry is golden - which i expect will take about 15 mins!0
