Double cream should freeze if whipped.

    Hi,

I have some double cream that needs using up today, any ideas what I could do with it? I would rather use it for proper dinners rather than sweet things if possible.

Add it to a soup, or pasta sauce?
Add to mashed potato...or potato gratin?
You can use it in all sauces for a richness. Mushrooms, garlic and cream added to a butter and flour roux is delicious.

If you can't use it today, whip it and pipe or spoon it onto a baking sheet in small lumps and freeze. When frozen put into poly bag.

The American cook Ina Garten uses a lot of cream in her recipes. Google Ina Garten or 'Barefoot Contessa' (her TV show).

    I make this recipe:

    SLowly fry an onion
Add diced chicken/ pork / pork chops. and brown
    Add a little brandy/calvados/perry/sweet cider.
Chuck in a finely sliced apple.
    Allow to cook through.
Add cream to finish, plus a few fresh herbs e.g. parsley, chives.

    Hi jackie,

I use it in soups and sauces or it's good for making butter or freezing:

    Making my own butter! (merged)

    Can I freeze cream?

There's an earlier thread with lots more ideas so I've added your thread to it to keep the suggestions together.

    Hi,
We've just had a family celebration and have a lot of (double) cream left over! We need suggestions for things to make with cream which can be frozen.
    Thanks. :)
