hmm - what about making some chocolate truffles - you wouldn't freeze them but you could add some alcohol and they'll keep for at least 10 - 14 day.
You could make some soup (cream of....) and freeze that - I made a parsnip and apple soup earlier on and added cream to it.
What about making custard with the cream and freezing it, or keeping it in the fridge and using it in a trifle on Christmas Day

You could just freeze the cream on its own - whip it a bit first. Keeps for ages.0

I agree with lumpycustard, I would just freeze the cream for using in cooking later...providing you whip it before freezing it will be fine.
Or you could use the cream to make butter:

Or use it to make ice cream, pasta sauce, stroganoff, meat sauces, soups etc as these all freeze well with cream in them.

I'd definitely go for the butter idea - stick the cream in a large ish jar to about half full, and then shake vigorously for as long as it takes. I went a bit silly over Christmas on bought way too much cream.
Yesterday I surveyed the fridge and found I had 1/2 a pint each of double and single cream, half a large tub of brandy cream and a pint of bandy sauce left (untouched from xmas day!)
I mixed them together and added another slug of brandy and then dug out my old ice cream maker and made brandy ice cream, its lovely!
I also froze what was left of the Christmas pudding, 4 large portions so next time the folks visit I have a nice dessert all prepared.
I remember doing something similar many years ago using left over cream and left over chocolate to make Ice ceam too0 -
