    Perfectly good potatoes.

Please remember that potatoes are a natural product and these ones will be from 2009, hence are bound to have eyes on them - nature wants them to grow at this time of the year.

It's amazing how many people think that when a potato has sprouts its gone off. I used to live with people who threw away so many potatos like that...

A potato is gone off when it goes green! To prevent that, you simply keep it dark as it goes green in the light. The green is some sort of posion, which while cannot kill you, could, theoretically, make you ill. I've eaten partly green potatoes and I'm fine :)

The green is not poisonous. It's just chlorophyll. But it shows the potato has been exposed to light and as well as chlorophyll the potato also produces more of the poison which is harmful in large quantities. After all potatoes are naturally and originally poisonous being part of the nightshade family.

I've just had a baked spud with tuna and salad. Very nice. The potato was a bit green around the edge and had a few small shoots.

Hate to tell you this but if the potato has green parts those parts are poisonous!!! hope you didnt eat them!
if you are taken in to A&E then then likely cause is the potato you have just eaten!

if the potato is sprouting a bit I usually just rub those off. but they ARE a sign the potato is aging a bit. I like mine fresh so buy mine without sprouting bits! which I usually get from my supermarket. if YOUR supermarket always sells potatoes which are sprouting then i would change supermarkets!

Are green potatoes safe to eat ?

Exposure of potato tubers to light either in the field, in storage, on the store shelf, or at home, will induce the formation of a green pigmentation on the surface of the potato. This is called "greening" and indicates the formation of chlorophyll. This pigment is completely safe and is found in all plants, lettuce, spinach etc.
But, in potato tubers, it is like the "canary in the mine shaft." The green indicates an increase in the presence of glycoalkaloids, especially, in potato, the substance "solanine". When the potato greens, solanine increases to potentially dangerous levels. Hence it is advised not to eat the green parts of the potato.

Those green bits are not poisonous. They may have elevated levels of poison but it's still nowhere near enough to be considered poisonous. I might avoid a very green potato but one spud with a tinge of green at the edge is not going to hurt anyone anytime. If you eat about 2kg of very green potatos you might have a problem.

Why do I vaguely remember stories from Ireland where people died/got ill from eating green potatoes many, many years ago?
