  • doesnt matter charlotte - you can even wrap it in tin foil BUT if youre putting it in anything metalic you must wrap in a layer or two of greaseproof paper first

    ( when i feed mine i alternate and feed from the top one week and from the bottom the next - not sure if it makes a difference lol but i think it does ensure a more even soaking )

    nigellas chocolate fruit cake (sounds disgusting) but really nice is easy and tastes great. I have the receipe somewhere will try and dig it out or i am sure it can be found on the net.
    any if i can make it successfully anyone can lol!

    There must be hundreds of Christmas cake recipes, google it and I bet you get so many you can't decide. However they are all much of a muchness.

    October is the time to make christmas cakes, puddings and mincemeat. I remember my gran doing this. They then have time to cure.

    Can't stand the stuff myself, not any rich fruit cake. I prefer a Dundee cake, this has a more spongy texture, with some fruit.

    Last year I had a plain old Tesco pud and it was really nice.

    I can second Nigella's chocolate fruit cake (is it still on the BBC recipe site?) - easypeasy to make and a brilliant standby if you don't get around to making a cake until Xmas Eve! Otherwise, I just use either Delia's rich fruit cake recipe or Nigella's, and substitute interesting stuff like dried cranberries & dried cherries for the nasty stuff I don't like (like mixed peel in Delia's), or the esoteric stuff that you can't find anywhere (like quinces in Nigella's). Provided the quantities of dried fruit are the same as in the recipe, you should be fine. And remember to cook it long and slow, and feed it regularly with whatever's in your drinks cabinet that smells nice. Brandy, rum, southern comfort, cointreau, whatever takes your fancy.

    I used to make and ice the Christmas Cake every year. A couple of years ago I switched to the Creole Cake, and I now prefer that. It improves with age, so I start making it in August.

    I second delia's christmas cake, i made one last year and intend to make another one this year (in fact, i made 2 last year, one for my mom and dad as well, and i'll probably do the same this year). Although i made mine last september or something i'll probably make mine in august, i think, and brandy it. a lot. :D

    I'll recommend Delia's cake as well.

    I have a friend who uses that recipe for wedding cakes as well.

  • I don't think you can beat Delia for Christmas Fayre - I have her Christmas book and have made just about everything in it at least once. Her mincemeat is fab and the Christmas cake is the most moist one I have ever had.
