    I'm rubbish at baking large cakes (am excellent at cupcakes tho!) so have bought a half price M&S one a few weeks ago.
    Understandable, it is totally delicious but I do end up scraping the marzipan and icing off - it's just too much and makes my teeth ache!
    How much does it actually cost to make an Xmas cake? I always look at recipes and think that there are an awful lot of ingredients.
    A whole load of money if you don't have a well-stocked baking larder and you don't buy the fruit and alcohol at the right price. Mine will cost about £12 in ingredients alone but I will get 2 humungous 5-6lb cakes out of it. The packet mixes a la Delia cost around £10 each and you end up with a relatively small cake :(. Sainsbos had 1/3 off their mixes and decorating kits yesterday but it's still too expensive IMO.

    The most MSE way with Christmas cake is waiting until the food sales after Christmas when the supermarkets just want to get shot of their stock, it lasts for ages afterwards and I would pay no credence to the sell-by dates...particularly if you remove the icing, store in an airtight container and keep feeding the beast with alcohol.

  • I did Mary Berry's, from Ultimate Cakes, which is my regular Christmas cake recipe and has never had any complaints :)

    The only thing I actually had to buy was some glac! cherries and some butter, as I had everything else anyway.

    I'll be feeding it up until about the third week of December and then it will be marzipanned and royal iced.

    I use Nigella's recipe from Domestic Godess & Feast - gets good results & comments every year, and those I make cakes for always want one the next year!

    There was a christmas thread and somebody posted a christmas cake receipe im trying to collect ingrediants bit at a time but I cant find the thread typical ! So if anyone has a receipe or can point me in the right direction thats great ive bought some morrisons saver dried fruit and glace cherries so far. Im pretty new to xmas cake baking I did one last year but it went wet :( I dont have to buy the alcohol to go in it as luckily my dad doesnt drink every year he gets given a lovely bottle of brandy at work and hes said I can have it for the cake hes still got last years too :)

    Any help is great I cant remember which thread it was !

    I use this one and love it!! It's lovely and moist, takes a while to do but worth every minute!

  • Maybe you can try Jamie Oliver's traditional Christmas cake.

    You just need time for the baking- mine took 2 hr 45 mins. I added dried figs instead of pineapple and also squeezed half an orange into the mixture as I was worried it may be dry. I use scotch instead of brandy as thats a family favorite. Easy recipe to tweaks and EVERYONE loves the cake.
