Oh I thought we were not allowed to say the C word yet and I love tha people are talking cake. I try a different recipe each year and last years fig and honey C' cake was divine, also made a white C'cake bit expensive that one but very yummy all the same havnt found this years recipe but strangly when I sorted out my bookshelf I put all the C suplements and recipes and books to one side scary eh!!:rotfl:

quick q about xmas cake.never made fancy trying dont even like stuff myself.
can you use fresh fruits or does it have to be dried.

Hi many thanks, here are the ingredients I use.
1lb 4oz mixed fruit, 8oz currants , 4oz glace cherries 4oz candied peel, 2oz almonds [either chopped of ground], 8oz plain flour, 8oz butter, 4oz castor sugar, 4oz soft dark brown sugar, 5 medium eggs, 1/2 tablespoon black treacle, 1/4 tsp mixed spice, 1/4 tsp nutmeg, pinch cinnamon, mean 1/4 cup tea, medium glug whiskey, same of sherry.
You can use the cheaper smart price dried fruit in this cake as cooking it first plumps it up beautifully.
Once cooked I feed with either brandy or Whiskey. :beer:0 -

the best christmas cake I have ever come across is in the good old Bero Recipe Book, on sale at Morrisons etc for 99p.
Lots of other basic recipes in there too.make the most of it, we are only here for the weekend.

I don't make a proper Christmas cake these days as i'm the only one that likes it but have always one Delia's from her complete cookbook and found that to be a a goodie, it's also the one my mum always uses. Don't know so much about it being frugal though as it's stuffed full of dried fruit which can be expensive (although is does go a long way). One way of cutting the price is if you have a Julian Graves near to you they tend to have a sale day (sometimes 2 or 3 days) when loads of things are half price and you can stock up then. HTH0

I made my first ever Christmas cake this year and I used my trust old Bero recipe book too. We're not keen on mixed peel so I doubled the quantities of cherries instead. It's in a cake tin now and I'm sprinkling brandy on it every week - can't wait to scoff it, it smells delish
PS I do loads of recipes from the book with my 5 year old son too, my Mum and Granny always used Bero books.:hello:
