Please can I ask, does anyone have a receipe for a 1lb loaf tin christmas cake.
Or explain how to scale down a 8" cake tin receipe.
The reason I ask, is we're not big cake eaters here, but I'd like to make an xmas cake. An 8" one would last so long here, that I think we'ed still have it at Easter, I know it would no doubt keep until then.But we wouldn't really want it.
I've seen the lb sized cakes in Tesco for about £2.00, but I'd like to make my own, I know you all understand:T

A true Christmas cake is not ` frugal` because the ingredients are so expensive. How about doing this one which is very reliable and you could always freeze in prepartion for Christmas.
I have used it countless times and it cooks like a dream.
Saucepan Cake
This makes a very moist fruit cake. However, it only keeps for about 2 weeks at most. Can be frozen.
7” square or 8” round tin lined with greaseproof paper.
1 lb mixed dried fruit(8 oz sultanas, 8 oz raisins, 4 oz currants)
8 oz butter or margarine
6 oz caster sugar
3 eggs, beaten
12 oz SR flour
1 tsp almond essence (optional)
Put fruit in saucepan, cover with cold water and boil for 10 mins. Drain fruit well, put back in saucepan with butter and melt over very low heat. Take off heat and add sugar and eggs. Beat well, then add flour and essence and beat well again. Pour into tin and bake in oven for 1 hour at 300 * F (150*C (then a further hour at 250*F (1340*C)

The recipe I have is for a 8" square or 9" round tin and says to halve the mixture for a 6" square or 7" round tin.

Evening all,
I am hoping to make my first Christmas Cake, well actually my first cake of sort!!
So I am hoping that someone has an easy (very easy!!) christmas cake recipe which I can make in the next couple of days and keep till Christmas.
