    Hi
Sorry yes a cake base, I was thinking of just small sweets, like dolly mixtures, just on the roof?

in that case, whipped ganache would be fine

    hi everyone!

I am going to be making a baby dedication cake for my friends little boy.

I'd like to do a 2 tier one, never done before.

Its going to be sponge, do i need dowels between the layers or maybe a thin board?

I think i will ice indiviudally before i stack them

    thanks

    BB

You need to ice individually with the top cake on a thin board the same size as the cake then put dowels in the bottom cake to support the weight of the top one.

Hi I'm new to this thread (frequent lurker - love everyone's creations!!)

Just wondering if anyone has ever made a maderia sponge cake? I'd like to make one for my mum for her birthday. So far I've found a james martin recipe and nigella one too, but wondering whether anyones actually made one or used these recipes.

The other thing would be icing it with roll out icing (sugarpaste is it?). I would like to do something simple - not too extravagant, but effective and look like I've put some effort in! Anyone got any ideas or examples?

I know it's a lot to ask, but if anyone could help would be much appreciated :)

i dont really think you can go wrong with a maderia recipe (other than burning it lol) - they all taste the same

for a simple by effective icing, i find doing a plain white cake, and then cutting out various size of circles in different coloured pastes, and then dotting all around the cake, gives a classy, but easy to achieve finish - you can buy a pack of ready mixed icing in most supermarkets, or just colour the left white icing, from the main cake

    so something like this

although i like to have a few of the circles hanging over the edge of the cake, as i find it breaks up the harsh join between the top and side of the cake (also covers up any creases/thinning you made when icing the cake too)
