Try cooking them at a lower temperature. I find they rise less at 140 degrees.0

I hollow mine with the back of a teaspoon slightly and cook on a low temp usutally about 140.

If you don't want it to be a Chocolate Cake, then all you do is leave out the cocoa powder and add an extra 1oz of flour (and if you don't have any evaporated milk, just use normal milk)
I have one of those giant cupcake moulds and have never had a problem with it.
