Help with Gnocchi please...

  • Thought I would share with you my cooking experience yesterday - had some gnocchi recently in a restaurant and hadn't eaten them for ages, so thought I'd have a go at making them at home.

    And it was so easy! And so tasty..... I really like them! :T

    The recipe was from BBC food website and was basically-

    500g potatoes (mashed very smooth, no lumps), add 200g plain flour, salt, pepper
    and (in this case) a bunch of fresh chopped basil (but I guess you could use other flavourings)

    Make a dough out of this, make little sausages, chop bits off the sausages to make little dumplings.

    Drop dumplings in boiling water, cook for one minute after they've risen to the surface.

    We ate them with tom sauce (tinned toms/onion/garlic/chilli/bay leaves, just chuck in a pan and cook for ages on low heat) and loads of rocket and parmesan....OMG delicious!!!

    Also this amount was enough for 4 (there were only 2 of us) - so as I made the dumplings ready for cooking on a plate, I did a 2nd plate for the freezer. Now they are frozen separately, I can put them in a freezer bag and cook from frozen.

    Just thought this was sooo easy and tasty had to be a good for OS!

  • they will take about 90 sec to cook from frozen so when you use that second plateful, pop them in the water straight from the freezer. My recipe adds in 1 egg yolk and a little less flour to the mash.

    You only need about 5 for a starter and 8 (with meat) or 10 (as a veggie dish) for a main - they are really filling.

    Never heard of arrabiata sauce. I've just googled it and sounds nice. Do you follow any particular recipe angela?
