Help with Gnocchi please...

    Tonight, following the recipe for the ingredients exactly, I made Homemade Gnocchi from Recipezaar.



    I'm really please because I found an method that makes them so easy to make I can have them from raw ingredients to the mouth in about 15 minutes (provided the potato was cooked before that is)!

    Here's what I did:

    I made the dough in my Kenwood Chef (marvel of the kitchen gadget world)...
    first using the whisk beater to beat the potato and eggs and then using the dough hook when I added the other ingredients. I processed it until the dough was smooth.

    Then I rolled the dough out on a floured board using a rolling pin until it was about 1/2 inch thick.
    Next, I used a pizza wheel to cut the dough criss-cross, making little squares. IMG_2497.JPG
    Much easier than rolling and cutting individual squares.









    Finally I dusted the squares with flour - just enough to stop them sticking together.

    Then the usual boil until risen to the surface + 10 seconds and voila!
    A beautiful, tasty, homemade dish that my 2 year old loved! And the best tasting gnocchi I ever had.

    I believe the rolling pin and pizza wheel trick make a lighter gnocchi as the dough is manipulated very little compared to the usual method.
    I suppose purists would say that the little ridges are missing but it doesn't bother us!

    Served it with tomato sauce anf fresh goat's cheese:

    Because I don't know how to make this and now I'm jealous - it looks scrummy!

    Edit to add: I'm also cross because I don't know how to pronounce the name.

    I've only tried gnocchi once, and thought they were vile.
    But, they were the fresh/vacuum sealed ones, so maybe I was just unlucky.

    Did you use the cheeses in the actual recipe?

    I used to think gnocchi were vile too - I had only ahd the vaccuum packed stuff...it's like eating pebbles!

    I did use the exact cheeses: ricotta and pecorino romano.
    I had tried the recipe using parmesan instead of pecorino and also using only about half the amount the orginal recipe called for...nice, but not as nice and definitely a different texture.
    The eggs are large eggs.
    The recipe says to use clarified butter, I used ghee (which I understand is clarified butter) which I melted gently on the hob.

    This is a dead easy recipe really.
    I also like the fact that it has carbohydrates, protein and calcium in it - my toddler eats these straight out of the colander and at least I know it's an almost complete meal. I give him green beans as well and he's in Heaven!

    yep, they're the ones, stodgy pebbles. I'd imagined them to be light and soft but no.

    Well I might give these a try, tey looked good in the tomato sauce too.

    what if you don't have a Kenwood Chef?

    I absolutely cannot imagine life without my £30 Kenwood Chef I bought 2nd hand from Ebay!!!

    I'm sure you could make this recipe by hand but needless to say I haven't tried it..and don't wish to - I would miss out on using my favourite toy!
