The difference between Jam and Jelly is that jam uses the whole fruit, flesh (or pulp) and all, jellies are just made from the extracted juice. They are therefore seed-free, and should be clear (think Fox's Glacier fruits).

    Bramble jelly
wash and drain fruit; wash and quarter a cooking apple (don't peel or core it; use the whole apple) . If you have LOTS of fruit use 2 apples
Add to pan, cover with water and simmer well to extract juice.
Allow to cool and strain through a muslin or jelly bag, preferably overnight, catching the juice.
DO NOT SQUEEZE THE PULP AT ALL

Discard pulp (I always put it on the compost heap;)
    measure the strained liquid.
For every pint of juice allow 1lb of sugar (just granulated, the pectin was in the apple. Add juice of 1 lemon (or a tablespoon of bottled)
(I would not try to make jelly from more than about four pints at one go and that's in a jam pan BTW)
Bring to boil and allow to boil briskly for 15 minutes
    (Have jars warming in oven)

    test and pot

(To test stop boiling, drop a small amount onto a chilled saucer and push it with your finger nail - if it wrinkles you have a set). If not, boil for a further 5 mins and re-test.

I used this recipe for the Damsons I got last summer which went down VERY well with all who ate it but you don't need the apple for stoned fruit as they have enough pectin in. Reason being I didn't fancy skimming all those stones out of my jam!

I'm not quite sure who I promised the recipe too:o so sorry for blocking the thread!

In my defence passing on the recipe was on my to-do list,

Hugs mumto5 that must have been scary...and yes secondary is a whole new ball game. I now have people 'turning up' for sleepovers and have not communicated with parents. I don't think I have ever spoken to DS's friend's dad and he has slept here a few times, though I have spoken to his stepmother. Mind you, that wasn't about a sleeopver!

(the friend has slept here not the dad;))

    Right off I go!
Don't put it DOWN; put it AWAY

I'm trying NOT to think of Fox's Glacier fruits....!

Plan for the weekend, as Him Indoors has a load of work on, is to

get small stuff living away from the windows as the workmen may come and replace them sometime this year (shruggy smiley here)
sort out tax and filing and rehome it in the hallway
Get some stuff sorted tonight to take to charity shop in morning
Take ebay photos after ironing clothes to sell!
Dot To Dot on floor decluttering and hoovering jobs

And remember I can do anything for 15 minutes Except Whine!
    I'll need a full hour for whining!:rotfl:
