I've had a thought, you could invite her over to dinner and ask her if there's anything she doesn't eat, that way you'll know what to avoid.
ETA - I forgot she isn't local, oh well. You could in conversation try and find out what she doesn't like. I hate fish, so tinned fish for me would be a waste and a shame if your don't know that kind of thing.0 -

I echo what others have said about long life foods, pasta, rice, soups, even maybe some of thise part baked rolls that last for months? I dont buy tinned chilli and curry and the likes but my brother does and he swear they are fab!
Do you speak with her often? Maybe pop into the conversation favourite food topics? find out that way? say you are going to try batch cooking but wonder if it will fit in your freezer, does she do this (even tho you know she doesnt lol) and ask does she have a big freezer - i am sure she will think it was s strange conversation to have if its topics you dont usually discuss, but when she gets her delivery she will smile at remembering the conversation!
I wouldnt tell her its the money she sent you - she gave you that money to treat yourself on hoilday, so let her continue thinking that you did0 -
It's rare that I'm the pessimist in these things, but I'm not so sure. It might just be the way you've written it out, but it sounds a lot like the girl was hinting around for money...which isn't always a great sign.
Even if you're sure she's legit, would she feel patronised or pitied if you sent her food?
If it were my friend that were down in the dumps, I'd probably spend the money on getting to see them to cheer them up - and maybe shout them some food while I was there

Honestly, I really, really wouldn't be offended if a close friend of 20 years hinted for a loan or gift of money, especially after she was so kind and generous last year. If one of your best and kindest friends can't ask you for a little help, who could they ask? That's what true friendship is, I would have thought0

I think it's a good idea, as she seems like a true friend to you.
What I am not sure about is whether you can open a Tesco account in another person's name with your card details. I think it may be better opening an account in your name and adding her address as an extra one.0 -

I decided not to include eggs as they might get cracked and also bread as mine usually arrives squashed. DF has a freezer and microwave. My aim was to get her feeling 'better' without having to peel or prepare, I went for branded goods as they tend to taste better.
2 treats...biscuits and Rum and coke!!
Thank you all for your suggestions. Took your advice re pasta, couscous, weight watchers ,fresh food and tins and more. DF doesn't drink coffee or need shower gel.

I did the same for a friend once, when I discovered that she only had 7p noodles in her cupboard, and a box of porridge oats which she made with water.
I bought her things that were quick to heat or cook, as she was also worried about large energy bills for having oven on for too long!Should've = Should HAVE (not 'of')
